Allagash was founded Rob Tod in 1995. As a brewery, we strive to create some of the best Belgian-style beers in the world. As people, we make sure to enjoy ourselves along the way. Part of that joy comes from constantly pushing the sustainability of our brewing operation and making a positive impact in our community. Big and fruity with light, tart acidity. Not all that dark, which is nice. No roast, no toast, no big chocolate or anything to get in the way of the yeast. Lots of rapberry and vanilla-like notes. A bit more of a sour than a quad but whatever.
Big tartness but it doesn't get out of hand and no acetic character builds up or destroys the palate. Soft oak and biscuity malts help balance and soak up potential acid. Very fruity with no big tannin, but lots of vanilla and mild woodiness. Really nice take on this often boring style.

Whatever this cherry-derived spice is, it smells like cherry. Gentle vanilla notes in there, as well, with fudgey malts and little/no roast. Something crusty and maybe it's lactose. Just gives a weird, non-beer character to the nose.
The Mahleb is strong, giving floral cherry which goes well with the vanilla. But the body is very light, though not thin. Lactose seems to loosen things and add its usual weird, dirty flavor. Malts are crusty, crunchy, very lightly sweet, but not soft or comforting like I want from a stout. Just a bit sugary and lactose-given, though the cherry notes are unique and interesting.

0.355l bottle. Golden body with a white head. Banana and honey are pronounced both in the aroma and the taste aith some notes of floral hops, apricot and sugar syrup. Nice one, I like it.

Orange and honey-like malt with an undercurrent of both soft funk and whiskey. Everything is really nicely homogenized and there's no strong acid. Whiskey gives rich bit not sharp spice with light liquor and barrel.
Woah! That's a LOT of whiskey. It's not sharp or boozey but it's very prevalent. Spice, oak, vanilla and soft orange and rhubarb mix with biscuit and honey. Chewy wheat and barrel tannin provide a big, deep texture. Moderate acidity assets itself and defines the style, on the finish. Funk throughout. Possibly a bit too much whiskey, though it's hard to be mad given how fls or ful and easygoing it is.

Wow that's a lot of Jim Beam! In a good way, not tannic or sharp. Some mulling spice, fruity apple and soft vanilla with moderate caramel-like malt to balance. Spicy oak on the very end keeps it dry. No alcohol noted, not too much actual spice.
Dry with a bready, crusty, crackery malt texture and woody-oaky tannins. Low actual whiskey flavor and very tasteful spicing, but I think it's just a bit too dry and the body a tad too light for all that it has going on. Still, it's nice to see both the barrel and adjunct done tastefully, do I gotta give it a lot of props for that.

Round and fruity with a candi sugar-like quality, though that's probably the honey. Excellent mix of marmalade and stone fruit with no alcohol or preponderance of crude esters and phenols.
Soft and malty with a zesty spice and maybe a touch more phenolic character and sweetness than the normal trippel, given the honey. Lovely stuff but I think the regular Trippel is a bit better, as I don't think the honey adds anything interesting here.

Light roast and a tasteful amount of orange zest give a good dryness. Not getting a ton of comforting base malt, though.
But it actually is amply malty with light chocolate and low orange character. Low roast. Kind of a weird choice for Allagash, but it's well enough done.

Flavor: medium sweetness, medium bitterness

1.5L bottle drunk 10/31/25.
Mostly clear, bright, waxy yellow-golden with a very large, well-retained, off-white head.
Lovely mix of grape and saison yeast. Really surprisingly soft and easygoing with very little acidity. How they managed to get low acidity on a grape coferment with champagne yeast, I have no idea, but there you have it. Drinks easy and juicy with excellent malt texture but not too much sugar. Again, very low acidity, with tons of actual Sacch. The handful of years on this seem to have been very kind. Could have gone many more, but certainly seemed peak or near here.
