Wallace Brewing Company, 15-barrel microbrewery, began selling its beer in January 2009, in historic Wallace, Idaho.
A collaborative effort of Wallace’s Chase Sanborn, Dean Cooper, Rick Magnuson and the Zanettis, the brewery pays homage to the town’s notorious past, creating a brand of beers with mining and bordello-inspired monikers such as ‘Dirty Blonde’, ‘Jackleg Stout’, ‘RedLight Irish Red Ale’, and ‘Idaho Select Light Lager’ .
“We want to brew in the honest spirit of the mining heritage,” General Manager, Chase Sanborn said. “It’s not only the prevailing reputation of the town, but also one that can elevate the Wallace Brewing brand.

22 oz. bottle, pours a dark caramel orangey brown with a small off-white head. Aroma brings out dark fruits, especially raisins and plums, with notes of caramel, oak and vanilla. Flavour is similar, with vanilla, oak and dark fruits. Well-balanced and nicely rounded. Good stuff.

Bottle: Deep brown color with a thin beige cap. Aroma is roasted malt, a little smoky, and bits of sweet malt. Taste is smokier than expected, but modest. Lightly sweet, bits of chocolate. Tasty.

On tap at bier thirty pours out a crisp clear copper topped with a sand head. nose is chocolate sweetness toffee and a malty richness. Taste is more of the sweetness toffee caramel light hops bitterness and a nice booze end.

On tap at bier thirty pours out a clear crisp straw color topped with a small white head. nose is nice light cereal malts some corn spice grassy hops. Taste is a nice light hoppy cereal malts and a light bitterness.

On tap at Bitterroot. Pours a clear yellow gold with visible carbonation and a white head that dissipates to the edges. Aroma has a sweet huckleberry note supported by sweet grains. Flavor has lots of semi-sweet huckleberry that grows and a bit of sweet grain underlying.

On tap at Toronado Seattle. Amber. A little bit dull and a bubbly head. Has some biscuity, caramelly aromas and woody hops. Similar palate, woody, a bit sticky, but nicely balanced. I hardly even miss the hop aromatics.

I ended up having this in a pint glass. Yeah, I know, next time, pilsener glass. However, after smelling and tasting, uh...yeah, no need to fret about glassware.
The appearance was a nice looking black color with a thin white to off white foamy head that dissipated within seconds. Light lacing strung down after the beer started going down.
The smell had a huge roasty coffee bean to light smoke, light breadiness was here and there.
The taste pretty much copied the aroma and lead to a refined smooth sticky sweet light choclatey aftertaste. A semi-dry finish accompanies the aftertaste.
On the palate, this one sat about a light to medium on the body with a good sessionable aspect to it. Super smooth stickiness just lathers up my tongue nicely but still doesn’t overdo anything.
Overall, I say this was a nice schwarzbier. I would love to try again in proper glassware.

Draft pour at special brews. Pours a copper color with a patchy head. Sweet caramel malt aroma. Flavor is a little sweet with a boozy finish. A little oaky as well. Tastes even stronger than it is. A little smokey as well late on the palate. Not great, but I liked it.

22 Oz bottle. Pours a clear golden copper with a big foamy head and lace. By the way, I love these bottles that v are a little more than just a bottle. This one, for example, tells a story. Call me lame, but I feel like that adds to the whole beer enjoying experience. Aroma has toasty malts, and subtle bitter hops. Flavor is a lot of cereal hops, pine, and some light citrus. No complaints here. Just a solid IPA in my opinion. I’m okay with being the guy that likes it more than everyone else. Good stuff.
