Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Bottle shared on Level 42, 14/11/2017. Many thanks to Paulo for this oen. A bright clear golden yellow coloured pour with a loose white head. Aroma is sweet clean apple, mellow funk, juicy apple, light floral notes. Flavour is composed of dry funky apple, plastic, crisp, woody apple, bark, solvent. Palate is crisp, super dry, lowish carboantion. Nice woody apple funk. .

Bottle shared in London - big thanks to Scopey. Pours clear gold. Nice dried apples in the snout, a little musty peel, hay bales. Light sweet flavour, very dry, with nice apples, bitter peel. Medium bodied with spritzy carbonation. Dry finish, a little musty, more apple peel, hay. Solid.

Bottle 375ml. @ [ Chriso’s pre- Xmas Tasting 2015 ] - Chris and Ruth's House, London. [ As Oliver's Yarlington Mill Fine Cider Medium Season 2014 ].Clear medium yellow amber colour with a small, open and fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to heavy apple, very intense apple, concentrat apple, stewed apple, a bit icecider alike. Flavor is moderate sweet with a long duration, apple, red apple, intensive apple, dry. Bottle from New Beer Distributors. Cork reads 15-1-01, so, January 2015 batch? 6.2%abv. Violent cork! High ball pour. Quick hitting sizzle of foam. Hazed, sparkling honey-colored body. Smells unbelievably minerally. Sweet & acidic apple mush & wet hay dominate. Cider vinegar. Pear softness, leafy greens, old books. Bitter, incredibly astringent apples. Manages a very deep apple essence, all the while being puckering dry. Mellow, but obvious barnyard character. My girlfriend wants to mention that it tastes like olives. Strong saline/mineral quality, along with some slight vinegar. Cork? Light, compact, tingling bubbles. Dry like having licked one too many envelopes. Very, very good.

Draft at Beavertown Extravaganza 2017 - London. Pours clear gold. Good balance here, moderate sweet apples, light musty dryness, pale bread, decent acidity. Medium bodied with average carbonation. Dry finish, with some bittering apple peel. Very good cider.

Cask (handpump) @ Kings Arms, 11a Buckfast Street, Bethnal Green, Greater London, England E2 6EY. [ As Oliver's / Virtue Cider Gold Rush #3 ].ABV: 6.5%. Light unclear medium yellow - amber orange colour with virtually no head. Aroma is moderate to light heavy apple, scrumpy, tart apples, farmyard, earthy notes. Flavor is moderate sweet and light acidic with a long duration, tart, dry, apples, apple pie. Body is medium, texture is oily to watery, carbonation is flat. [20160729] 6-2-7-3-14

Draft @ Beavertown Extravaganza'17. Doré, col fin blanc retombant rapidement. Arôme offre un excelletn parfum fleuri, pomme pressée avec qcq effluves de levure sauvage. Palais est bien fruité mais sur de bons éléments râpeux, finement aigrelet indiquant un effet de pomme verte, tanin niveau de la peau, râpeux persistant, et rappel de purée de pommes pressées. Léger fleuri ponctue le tout et ajoute à ce caractère très frais.

Draught at Hawkes Cider Joint. It pours clear amber with a small white head. The aroma is soft, sweet, juicy, apple, sugary, pie and white sugar. The taste is rather, dry, bitter-sweet, earthy, black tea, tannin, wood, leather, touch of suagry sweetness and apple skin with a drying finish. Medium body and soft carbonation. A touch too drying/tanninc perhaps. Not bad anyhow.
