Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Bottle at home from Oliver's online. A clwer copper orange coloured pour with a halo of white head. Aroma is smokey apple, phenol, brown sugars, band aid, light toffee. Earthy apple,. Flavour is composed of really funky woody dry bark apple, phenol, medicinal, funk, dry woody bark, light phenol. Palate is crisp and tangy, super dry, tannin.. Fine carbonation. Super dry.

Bottle, 750 ml. Hazy pale yellow, large short lasting white head. Pears, high carbonation, bit juicy, somewhat thin in finish.

BIAB at the White Horse Inn. Cloudy orange with almost no head. Fruity, funky, apples, sweetish, very juicy and easygoing.

Panda at home, thanks to Ed Danlo, 30/07/23. Clear golden amber with a fast collapsing off white head. Nose is sharp apples, funk, tannins, orchard wood, herb, hedgerow, farmyard notes. Taste comprises tarte apples, peated tones, light medicinal strokes, smoked straw, herb, grains, light farmyard notes, vinous. Medium bodied, moderate carbonation, drying close. Solid complex affair.

BIAB at Ciderdog Festival, the Miller London on Saturday 15Jul2023. Orangey gold colour no head and aroma of funk, apple. Taste is sweet, fruity apple, funky, orchardy with drying tannins. Medium bodied, low carbonation, medium dry finish. Nicely drinkable

375ml bottle from Fine Cider Co. Sightly hazed golden colour, afew short-lived bubbles on top and aroma of perry pear, fruity, floral, funk. Taste is sweet, pear, fruity, fleshy, woody, oak, biscuit, with some funk, citric notes and tannin. Medium bodied, low carbonation, drying citric finish. Quite drinkable.

Keg at The Cider House, Borough Market, on Saturday 15Jul2023. Slightly hazed golden colour, short-lived bubbly white head and aroma of apple, fruit, floral. Taste is floral, elderflower hints, fruity, apple, fleshy, tart, along with drying tannins. Medium bodied, light carbonation, dry floral tannic finish. Nicely drinkable.

375ml bottle from Fine Cider Co. Orangey amber gold colour, no head and aroma of wood, phenol, whisky barrel, peaty, apple, funk. Taste is sweet, fruity, apple, apple pie hint, tangy, with funk, wood barrel, oak, earthy, peat, and drying tannin. Medium bodied, low carbonation, dry woody oaky tannic finish. Very drinkable.
