Ryan's travels have ignited a passion and love for great beer. His continuing commitment to the quality of beer and his enthusiasm have created Bullfinch Brewery and its contemporary take on craft beer here in the UK.
Ryan has been brewing professionally since 2014 and is making progressive beers that blend experimental ideas with traditional brewing methods and techniques.
Hidden away under a railway arch in South East London Ryan can be found brewing his modern ideas on a much loved and used, historic 5 Barrel kit originally built by Charles Wells.

Cask (gravity) @ 33th Pigs Ear Beer and Cider Festival 2016, at The Round Chapel in Hackney, London, England. [ As Bullfinch South Eastern Bloc ].Clear dark black brown color with a average, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, roasted, dark malt, dark roasted, light burnt. Flavor is moderate to light light heavy sweet and moderate bitter with a long duration, malt bitter, roasted, dark malt. Body is medium, texture is oily to watery, carbonation is soft to flat. Cask at the Cock, 01/03/17. Pitch black with a solid tan head that has excellent retention qualities ... a beautifully presented beer and worthy of a 5. Nose is liquorice, spice, pine, red berries, charr, cocoa. Taste comprises light pine needle, toffee, cocoa dusting, roast malts, charr, brown bread, toasted brown sugar, black peppery spice. Medium bodied, fine carbonation, drying close spattered with earthy hop bitterness. Decent CDA.

Cask at Londinum at Tree Folks, Rome-Italy. Orange amber hazy pour, minimal foam. Nose: zest, candy orange. Mouth: bit boring, low carbo, some orange here and there. Meh ---Rated via Beer Buddy for iPhone

Cask at Pigs Ear 2016 - London. Pours clear orange with a light, creamy head. Pale bread on the nose, a little tangerine meringue. Medium sweet flavour with doughy white bread, lemon rind, straw. Light to medium bodied with fine carbonation. Finishes with moderate sweetness, more tangerine and creamy meringue, lemon, melon. Not bad.

Pigs Ear Fest. Cask. Light haze on this gold beer, small bubbly pale cream colour head. Palate is light, semi dry and has decent fine carbonation. Sweet and slightly raw malts. Very sweet floralness. Sweetish orange - lemon citrus. Mild hop spice. Light semi dry finish. Pretty sweet for an IPA/APA.

Pigs Ear Fest. Cask. Opaque black - brown beer, good tan head. Palate is smooth, dry and has decent fine carbonation. Rich if thin dark malts, powdery dark chocolate. Mild malt cream. Little tangy dark fruits. Light dry finish. Dark chocolate linger. Just another stout really, tad richer than the crowd.

Gravity dispense at Pigs Ear ’16, 29/11/16. Clear golden amber with a decent off white cap of bubbles. Nose is sweet fruits, biscuit, caramel, candied orange peel. Taste comprises a sweet malt base, caramel, orange wine gum, biscuit. Medium bodied, fine carbonation, semi drying close. Ok but a touch overly sweet and not one I’d look to revisit.
