Ryan's travels have ignited a passion and love for great beer. His continuing commitment to the quality of beer and his enthusiasm have created Bullfinch Brewery and its contemporary take on craft beer here in the UK.
Ryan has been brewing professionally since 2014 and is making progressive beers that blend experimental ideas with traditional brewing methods and techniques.
Hidden away under a railway arch in South East London Ryan can be found brewing his modern ideas on a much loved and used, historic 5 Barrel kit originally built by Charles Wells.

Cask @ Mr Foley’s, Leeds. Hazy golden with a thin head. Tangy with a small sweetness and lots of grapefruit. Has a bitter finish.

Bottle from Euston Tap (West). Pours golden amber with a lasting bubbly white head. Aroma of orange, grapefruit, bitter lemon, flowers, grass and hay. Light sweetness, heavy bitterness. Medium body, slight oily texture, soft carbonation. Finish has an excellent level of bitterness. Good beer.

Keg at the resurrected Catford Beer Festival, (at the recently refurbished and reopened) Catford Bridge Tavern, Catford. Hazy gold pour with a white head. Wheat, honey and banana aroma. Flavours of yellow melon, vanilla, banana, baked apple. Good stuff.

Cask stillage at the resurrected Catford Beer Festival, (the recently refurbished and reopened) Catford Bridge Tavern, Catford. Amber pour with a white head. Vanilla, honey and oats in the aroma. Flavours of vanilla, honey, wheat, light malt. Not bad.

Keg at the brewery. A light golden yellow coloured pour with a sticky white head. Aroma is nice delicate floral hop, honeysuckle, pale grains, light cif lemon. Flavour is composed of crisp light grains, floral citrus hop, light grassy hop. Easy going and well put together. Palate is light and crisp, highish carbonation, semi drying finish. Good stuff.

Cask at the brewery. A light hazed deep ruby red coloured pour with a fading off white head. Aroma is earthy tangy malts, brown bread, sugars, apple, dull earthy coffee. Flavour is composed of semi sweet, brown sugars, malt loaf, earthy mellow coffee, bit meaty. Palate is medium sweet, sticky, lowish carbonation. Lingering dirty roast. Not a fan.

Keg at Castle Tap, Reading. 19/05/17. Weak floral and farmyard aroma. Dark cola brown. Thin creamy white head. Juicy Grapefruit. It builds in bitterness. Light bodied. Watery. Lively carbonation. Middling finish. Good stuff.

Cask (gravity) @ 33th Pigs Ear Beer and Cider Festival 2016, at The Round Chapel in Hackney, London, England. [ As Bullfinch Oat IPA ].Clear medium orange colour with a average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, caramel, bread, oat, sweet malt, moderate hoppy, fruity hops. Flavor is moderate sweet with a average duration, bread, oat, sweet malt, fruity hops. Body is medium, texture is oily to watery, carbonation is soft to flat. [20161129] 6-3-5-3-11

Cask at the London Brewers Market. Pours clear orange-gold with a frothy, white head. The nose holds pithy, rindy citrus, dried pale malts. Light sweet flavour with ample flinty minerality, citrus peel, pale grains, pine needles. Light bodied with fine carbonation; decent condition. Drying and flinty in the finish, more pine needles, citrus peel, hay. So so on the whole.

Cask gravity at the London Brewers market. A hazed orange golden coloured pour with a loose speckled white head. Aroma is sweet berry, raw golden grains, hedgerow berry, and some orange rind. Flavour is composed of raw bready grains, grains husks, orange rind citrus, grassy citrus. Palate is grains, mellow Cask condition,. Assertive slightly rough bitterness .
