Ryan's travels have ignited a passion and love for great beer. His continuing commitment to the quality of beer and his enthusiasm have created Bullfinch Brewery and its contemporary take on craft beer here in the UK.
Ryan has been brewing professionally since 2014 and is making progressive beers that blend experimental ideas with traditional brewing methods and techniques.
Hidden away under a railway arch in South East London Ryan can be found brewing his modern ideas on a much loved and used, historic 5 Barrel kit originally built by Charles Wells.

Keg at Craft Beer Co, Cov Garden, 12/05/14. Hazed reddish amber with a moderate light beige covering that stays for the show. Nose is bitter orange, caramac bar, pink grapefruit, straw, sweetish vibes, earthy tones. Taste carries a big mineral blast, mango, grapefruit, earthy hops, light spice, caramel malt. Medium bodied, fine carbonation, semi drying close laced with hop bitterness. Decent enough IPA, a little sweet in places but the big mineral presence worked well to balance this out.

Bottle picked up at Bullfinch/Anspach, Saturday 26th April 2014 consumed at Cabbage Moors campsite, Great Shefford, Cambridge Sunday 27th April 2014 Pours deep amber with mid sized off-white head. Hoppy but quite earthy quite trad’ bitter like on nose but punchier, some citrus. Taste is bitter, good hoppiness throughout not as cultured or fancy as something similar with US or NZ hops but the East Kent Goldings and Fuggles can do a damn good job when used in copius quantities, they are assertive, perhaps a little harsh/rough but really define this beer. A little toffee at the edges but there is a citrussy edge or should that be citrussy hedge :-) Love this. A7 A4 T8 P4 Ov16 3.9

Keg at Bullfinch. It pours black with a medium beige head. the nose is earthy, toast, aniseed, treacle, pine and varnish. The taste is bitter, earthy, rich roast, toast, pine, varnish, soap, liquorice and some pepper with a dry, toasty finish. Medium body and fine, prickly carbonation. Hides abv rather. Bullfinch’s best beer thus far. Nice work.

Keg at the brewery during London Bimble; dark brown pour with a thin creamy tan head, coffee aroma, taste had light pine and citrus, roast malts and coffee.

Draft at the brewery. Aroma is nutty, caramel with a hint of grassy citrus lemon and roast malt. Clear dark brown caramel coloured pour with a lasting tan head. Flavour is nutty caramel malts, nice balanced citrus pine hops. Palate is slightly ashy roast , nice and dry.solid black IPA.

At the brewery London Bimble. Some chocolate and coffee. Black beer lasting tan head. Damn tasty and easy drinking. Wouldn’t guess its 7%. Tasty. Very drinkable.

Bottle at home in London - sourced from the brewery. Pours deep black-brown with a thick, mocha cream head. The nose has lots of oily, dark chocolate, decent roast, hints of espresso and burnt earth. Medium sweet flavor with robust but balanced overarching roasted malt character, prominent chocolate, low bitterness, understated ripening orange and grapefruit. Medium bodied with fine, massaging carbonation and creamy texture. Finishes with some gooey chocolate and resinous, lightly torched pine, some dark bread, minimal bitterness, light charcoal, dark chocolate, slight licorice and raisin. Nice depth. This black IPA is neither excessively roasty nor hoppy, which is fine by me. Rather, it’s fairly creamy with lots of roasted malt and chocolate character, along with subtle citrus and dried fruits. Quite approachable, especially given the strength. Very good.

Draft @ the brewery. Pours a slightly hazy pale amber color with a small off-white head. Has a fruity dry hoppy citrus aroma. Fruity malty citrus hoppy flavor. Has a sweetish malty hoppy bitter citrus finish.
