Tallgrass Brewing Company was founded by Jeff Gill in 2007 and now offers a full line of award-winning craft beers produced in a 60,000-square-foot facility located near the Flint Hills in Manhattan, Kansas. Through its Grain-to-Glass™ program, the brewery is dedicated to providing consistently remarkable beers by emphasizing quality in every aspect of production. Can thanks to Ryan. It pours near black with a thick tan head. The nose is earthy, toast, cocoa, salted caramel and mild smoke. The taste is rich roast, toast, earth, cocoa, dark fruit, decent bitterness, cola and soda water with a dry, toasty finish. Medium body, moderate carbonation and foamy mouth-feel. Very approachable and drinkable porter.

Draft at Hopleaf, Chicago. Pours clear orange with an off white head. Aroma of citrus, tropical fruits, orange peel and light caramel malt. Flavour is light moderate sweet and over moderate bitter, unfortunately very short lived. Medium bodied with moderate carbonation.

Draft at Burger Joint in the Ogilve Transportation Center, Chicago. A "mere" pale ale smell, not big on hops at first. A cloudy gold color, and the usual thin, sudsy IPA head. But once in my mouth, the large hop note grabs on and doesn’t let go. Big chunk of citrus and resin. I had not read the description before trying, so I thought it was just an overload of the usual Three C’s. Settles into a coating of pine tar on the palate, then some orange peel. Jealous that this train terminal now clearly has better beer than Union Station. All we can muster is The Snuggery.

Tap at the Hopleaf, Chicago. Poured a clear light amber with a frothy white head, broken white lace and high carbonation. The aroma is grassy hop. The flavour is medium to weak bitter with a hoppy weak spice citrus palate. Nice and drinkable but lacks body and flavour for me.

Can shared at CBC Islington during the Ryan Tasting - big thanks to Ryan himself for this beer. Solid IPA. Tasty, well balanced, with notes of citrus and light, dried pine. Quite drinkable.

Draft at Old Chicago. From notes. Coffee and chocolate with hints of vanilla and something a little fruity. Pretty good. I would drink this again. Love the name by the way!

Can. Pours a clear reddish amber with a light brown head that dissipates to the edges. Aroma has a good amount of nuttiness and earthy grains with a bit of sweetness. Flavor has dark bread and a touch of grass up front with a nutty finish. A bit thin.
