500mL swingtop bottle from DA, drunk on 11/07/07 at about 4-6 months old.
Fabulous appearance, unfiltered, leaving the sediment behind to create a sparkling, clear, pale gold, brassy bottle with a mountain of white, rocky head that is stubbornly retained and shows profuse lacing.
Grassy, lightly leafy hops top off a deliciously estery and phenolic yeast character with a balanced, but tending dry, malt profile of light honey, nuts and a pinch of caramel. Lemon-lime hop and yeast acids linger on the finish, and as it breathes, the malt becomes more like fresh baked baguette, giving a rich, deep maltiness, though never getting too sweet. No alcohol or flaws.
Flavor, not surprisingly, shows a crisp, hop enlivened finish, that gives honey, nuttiness, moist whitebread and white pepper phenols on the way. Tight, engaging carbonation certainly helps its case, giving it a nearly creamy feel. But the dryness helps balance. Esters remain on the finish. Perhaps a bit more "sourdough"-like notes than I’d prefer and it could stand to be a touch more dry, but this is certainly flawlessly brewed, authentic stuff. Nothing wild, funky or particularly unusual, but correct attenuation and a proper yeast will go a long way in a saison. The restraint and low alpha acid qualities of the hops are just icing on the cake.

Aroma of lemon, honey and herb. Slightly hazy gold color with a very large white head. Thin to medium body with fizzy carbonation. The flavor is spicey, with basil (but not like fresh basil) and there is an underlying honey note. Rather dry, slightly bitter. Decent drink, though rather unusual.

Aroma of honey and pale malt. Hazy ripe apricot color with a white head that lazed about. Lace tatters. Medium body with creamy carbonation. The flavor is caramel and herb. There’s hop, but it’s either grassy or floral. It’s got a really pleasant impact. A little spice. It’s nice. Amazing flavor for a lager. The finish is dry and ... It’s good, but difficult for me to describe. Try it, you’ll like it. I was really surprised.

I really wanted to get this beer because the Belgian style beer they made before this (Saison) was so freaking amazing. So I went out to trade for this and Pitonka/5000 was able to provide it, thanks Andre. It pours with no head and a ring of lacing. The color is dark brown and gets murky with the yeasty part. Aroma is a very spicy, piny and some ammonia mixed in with light bread-y raisin more traditional dubbel aspects. Taste is again piny, spicy with light black bread and raisin. Altogether the more traditional dubbel aspects are watered down in its place are the weird wet wood mixed with some off flavors and a mineral quality. The yeasty part adds a bit more body and overwhelms the negative aspects but not enough to think this will improve with age. A bit too light on the body and low bitterness. It’s almost more of a spiced beer than a dubbel but either way it lacks enough substance.

2007-11-02, Papsoe Blind Tasting
Cloudy blond color. The aroma is strange, with white sugar, spices, a bit herbal; very light bitter oranges and a bit soapy too. Medium body; some sweet malt flavor, with a quite evident spicy character (coriander and more), light residual sweetness; it ends quite dry, and with a warming alcohol feeling. Original.

From bottle, blind tasting at Papsoes - beer no 5. Pours clear yellow with a fully deminished white head. Grassy and cardboardish aroma, somewhat spiced. Flavour has whiff of malt. Ends with bit of bitterness. Boring

Bottled. An unclear orange beer with a thin beige head. The aroma is sweet malty with notes of spices and peaches. The flavor is sweet malty with notes of peaches and spices among them ginger, leading to a dry and slightly spicy finish.

Bottled. A hazy golden beer with a thin orange head. The aroma is sweet malty with notes of straw, and so is the flavor, though notes of grass is added to the flavor. Fine, but nothing special.

Bottled. A hazy golden beer with a thin biege head. The aroma is hoppy and flowery combined with notes of peaches. The flavor is sweet and very fruity and with an alcohol burn on the palate towards the end. A quite simple beer. Thanks to Papsoe for sharing.
