Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle. Dry nose, apple, minerals, sulfur. Dark golden, slight lace and low carbonation. Lovely dry apples, minerals, slightly funky. Just a bit of sweetness underneath to make it pleasant. Great on a hot summer day. Very dry, somewhat raw finish. Good. Not as unapproachable as some raters have made it seem, tho definitely puckingly- ass dry.

2008 Bottle. Sweet apple nose, lightly spicy. Deep, dark golden, lace. Medium sweet, lots of apples, cinnamon, caramel. Soft carbonation. Quite nice, though not as complex and delicious as their poires. Still, good stuff.

Light golden color, frothy white head. Very soft gentle nose with pear, spice. The mouth is very soft, decent acidity, moderate carbonation, so well balanced and highly drinkable. Elegant and graceful all the way. Pears linger in the mouth. Beautiful.

Bottle at NK Bar. Deep golden colour with no head. No carbonation. Strong pear aroma, like concentrated juice. Flavour is concentrated pear juice, a bit Sauternes like, late harvest pears. Really good and well suited as a dessert drink.

75 cl 2009 bottle from Takamura. Amazingly rich, lovely nose. Big pear, apple. Medium golden, though slightly darker than the regular poire. Sweet pear, great tart tang, baked apples, grass, minerals. Lightly spicy, with all kinds of fruit flavors, including tropical. Extremely delicious. Great balance and richness. Full, silky body, nice prickly carbonation.

Bottle from Takamura Online. Nice semi-sweet apple nose, ripe but still a bit tart. Lovely deep golden color with a medium head that goes right to late. Very tasty—ripe fruit, minerals, light vegetables and soil, sweet enough to be fruity and have nice apple flavors, but nowhere near “sweet.” Dry, slightly sulfury, chalky finish. Nice, prickly carbonation. Very refreshing and tasty. Not super complex, maybe, but I could drink gallons.
