Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties
Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.
Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle 750 ml thanks to _angst_! Sampled on August 23, 2014. Marked 6% ABV, also 2012.Clear golden color, white head. Apple, sweet, jam scent. Apple, tart, peel taste. Apple, mineral, dust, chalk aftertaste. Medium to fizzy mouthfeel, medium bitterness that is dry and tart.

Bottle bought through Riktig Cider. Pours golden with a fizzy white head that leaves a small trace on the glass while dissipating. Smell is fruity with varied smashed apples, starfruit, dried pineapple, moist hay, soil, leather, barnyard and lemon zest. Taste is tiny sweet, tiny sour and fruity with smashed apples, hay, dry soil, paper, unripe starfruit and hints of wood. Mouthfeel is crisp, dry, astringent and light bodied. Finish is fruity with apple must, hay, dry soil, unripe starfruit, paper and lemon zest. Bit too astringent and papery in the flavour.

Bottle shared. Pours like white wine with no head. Aroma of sweet pears, soft honey, ripe pear skin, wood and a light funk. Flavour is moderate sweet and light to moderate acidic. Medium bodied with light Champaigne like carbonation.

75cl bottle from Pukka Wines, Shrewsbury. Bottle says 5.5%. Comes in a proper fancy bottle with a nice cork too (which went to the dog as always). Expected a fizzy affair and got it, but a bit too light, clean and fizzy for my tastes. The rosy, juicy fruitiness is there and gives an elegant lift to the glass but it’s much too subtle for me. Personally I prefer my cider a little rougher round the edges.

Bottle, 50cl. A clear, golden ice perry, flat, with lots of pears in the aroma, really concentrated, with white sugar and some spiced notes. The alcohol is present too. Some warmth on the palate, it’s full-bodied and quite acidic, but the acid is kept under strict control by the sweetness. Lots of ripe pears in the flavor, white sugar and a faint spiced touch. Some apple core. Lasting finish with sweet, concentrated pear dominating. A really nice one, unfortunately damn expensive, else I’d most definitely repeat it. 140322

Sampled at VANØ annual meeting2014. Clear, deep golden body with no carbonation. The texture is almost a bit oily like olive oil. Strong, intense aroma of pear with a hint of apples as well. Flavor is very sweet, concentrated pear juice in a refined way. I feels pure and clean, can almost feel the pear core and somehow there is also a bit of apple cider present somehow. Even if it’s extremely sweet it doesn’t feels too sticky, probably due to the relatively high alcohol content. It’s a fine and delicate balance between sweetness and alcohol. Very nice.
