Description
St. Joseph's Abbey in Spencer, Massachusetts, is home to a community of Trappist monks and the first American Trappist brewery. Following the Benedictine tradition of ora et labora (prayer and work), the monks pursue a simple life of contemplative prayer, manual labor and hospitality. The brewery helps support the monks and their charitable outreach. The brewery, being far into the abbey's land, is not open to the public for tours or tastings.

Bottle: Poured a pitch-black color stout with a large dark foamy head with good retention and some lacing. Aroma of roasted malt notes, black chocolate with some Belgian yeast phenols is quite nice. Taste is a good mix of roasted malt notes with some black chocolate notes, Belgian yeast phenols with light residual sugar notes. Body is pretty full with good carbonation and no apparent alcohol notes. Solid imperial stout.

To begin with, a statement: this is no abt/quadrupel: this is a stout. An imperial stout, okay, but a stout nonetheless. Stir caused, yet? Let's start the tasting, then: it pours shiny jet black with a tan head that lasts but an instant. Aroma is chickory, coffee, aceto di Modena, soy sauce, blackberry, licorice (sounds like stout or what?) Taste is velvety, soft, low carb. Long-lingering bitterish (bitterish!) finish with evident hints of espresso. Guys, this is a stout.

12 ounce bottle into signature chalice, best before 12/22/2018. Pours fairly hazy/cloudy medium orange/amber color with a 1 finger dense and rocky cream colored head with great retention, that reduces to a small cap that lingers. Nice dense soapy lacing clings on the glass, with fair amount of streaming carbonation. Aromas of red grapefruit, tangerine, lemon, peach, pear, pineapple, apricot, red apple, passion fruit, mango, melon, berry, citrus peel/rind, peppercorn, pine, caramel, cracker, toasted biscuit, and herbal/floral/grassy earthiness. A bit too malty/muddy aromas. Nice and pleasant aromas with good balance and complexity of citrus/fruity/tropical/earthy hops, fruity yeast, and dark/bready malt notes; with solid strength. Taste of red grapefruit, tangerine, lemon, peach, pear, pineapple, apricot, red apple, passion fruit, mango, melon, berry, citrus peel/rind, peppercorn, pine, caramel, cracker, toasted biscuit, and herbal/floral/grassy earthiness. Light-moderate pine, citrus peel/rind, herbal, floral, grassy, peppery bitterness on the finish. Lingering notes of red grapefruit, tangerine, lemon, peach, pear, pineapple, apricot, red apple, passion fruit, mango, melon, berry, citrus peel/rind, peppercorn, pine, caramel, cracker, toasted biscuit, and herbal/floral/grassy earthiness on the finish for a good bit. Great complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity yeast, and dark/bready malt flavors; with a great malt/bitterness balance, and no lingering hop astringency after the finish. Light-moderate increasing dryness from lingering bitterness. Medium carbonation and body; with a very smooth, moderately creamy/bready/sticky, and fairly resinous/rindy balanced mouthfeel that is great. Minimal warming alcohol for 6.5%. Overall this is a very nice fruited English IPA. All around nice complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity yeast, and dark/bready malt flavors; very smooth and easy to drink with the mellowly bitter/resinous/drying finish, not aggressive. Nice balance of juicy/dank/earthy Citra hops and ruby red grapefruit; with a balanced bready English malt backbone. Mild residual sweetness with lingering resin dryness. A very enjoyable offering, and well made style example. Was probably better fresher.

Pours a hazy amber with a thick white head. Aroma of tropical fruits and Belgian yeast. Taste is fruity, citrus and dry malt dominate. Hops are subtle on the tongue, become more pronounced on the palate. Palate has ferrous notes as well as sharp hops.

Hazy brown. Aroma is cinnamon, dates, figs, dried fruit peel, not so sweet. Taste is harsh sweet malt. Umami. Also cloying. Ok.

0.33 bottle. Spicy sweet aroma, this smells dangerous and stone-fruity. Plummy, dates, sweet and very tasty. Not sweet considering 10.2%... really recommendable.

Gushing bottle. Cloudy haze, low head. Sweet hazelnut, boozy aroma. Medium body, dry mellow. Sugar, Christmas pudding, light smoke, roast, burned sugar, cheapush booze. Dessert.

Bottle, gusher. Rather clear dark brown color with beige head. Aroma is apples, raisins, chocolate, some berries, dried fruit kompot. Taste is apples, raisins, chocolate, dates. Silky mouthfeel with foamy carbonation. Quite good.

Gekocht op 16-08-2018 bij Dranken Geers in Oostakker. En thuis geproefd op 19-01-2019. Spencer Monk’s Reserve Ale is een donkerrood en helder drankje dat bij het uitschenken bedekt wordt door een normale hoeveelheid beige schuim in de vorm van stevige slagroom. Het blijft sterk aan de glaswand kleven maar pareling is niet merkbaar wegens te donkere kleur. Het aroma van Spencer Monk’s Reserve Ale is karamel-zoet, met wat pruim en zwarte bes, een chocolade en geroosterde mouttoets, wat nat hout en een sherry alcohol toets. De smaak is karamel-zoet en lichtjes bitterig, ook nog pruim, zwarte bes, geroosterde mout, nat hout en wat vanille. In de mond geeft Spencer Monk’s Reserve Ale een volle body met een olieachtige textuur en een medium koolzuurprikkeling. Een complex biertje, redelijk gebalanceerd maar het geroosterde laat zich hier stevig gelden. De nasmaak vloeit lang uit is licht bitterig en karamelzoet en ook het geroosterde met de natte houttoets is nog present. Dit lijkt mij een ietwat typische Belgische Quadruppel met een ferme dosis karamel en een stevige geroosterde smaak en nasmaak, allemaal dingen die je aanzetten tot langzaam degusteren.
