Description
St. Joseph's Abbey in Spencer, Massachusetts, is home to a community of Trappist monks and the first American Trappist brewery. Following the Benedictine tradition of ora et labora (prayer and work), the monks pursue a simple life of contemplative prayer, manual labor and hospitality. The brewery helps support the monks and their charitable outreach. The brewery, being far into the abbey's land, is not open to the public for tours or tastings.

Bottle at SinH4’s Goodbye Event. A prototype of a Belgian ale, everything is just right, and it also has character. Smooth.

Golden copper color with white head. Fruit esters, banana, grassy hops, full caramel taste. Not too exciting, but just nothing wrong. Soft but high carbonation. Great beer!

Bottle. Pours with a hazy golden yellow hue with a huge white head. Aromas are of sweet and dried fruit, apples and pears. Very yeast driven. Dehydrated apricot. Mild floral. Smells quite sweet. Light malt. Flavor is yeasty, spiced apple, pear, light cardamom, some phenolic pepper. Soft bready and biscuity malt. Some floral notes. Hop bitterness is low (I wish it was higher). A bit sweet overall as well. Lively carbonation, off dry.

Bottle. A bit excited to finally have the American trappist beer. Well, it looks quite nice, with an unclear, orange-colored body and a dense, finger-thick off-white head. The aroma is fruity and lightly sugary, with a spiced and herbal touch, canned peaches and some pine cones and grass. It’s full-bodied and quite effervescent, semi-dry. There’s canned peaches, white sugar, bitterness, some pine cones and a herbal hint in the flavor, all lasting for some time. Quite herbal bitter in the very end. A decent one indeed, although not at the same level as the older Trappist beers. But sure nice to taste. 150610

Bottle courtesy Omgrich of and shared with the Shape crew.
