Panda thanks to SaltyGrog: Poured a coppery golden with some bubbles in the head. Aroma is boozy, caramel, apple, spices, alcohol. Taste is boozy, alcohol, honey, apple, wow this one hits hard.

375mL 2025 bottle pour at the meadery, 11/1/25, as pictured.
Star anise backed by alcohol and yeast. Some syrupy smelling honey.
Not so boozey in the mouth. Sweet, sugary, lighter bodied for all the sugar and it's size. Star anise is tasteful and gives a licorice and black pepper character. Not terribly complex but I guess it's not barreled so not sure what more I'm expecting.

Bottle: Poured a dark golden color mead. Aroma of cinnamon and apple with some honey notes. Taste is also a mix of cinnamon and apple notes with some sweet honey notes. Body is full with an oily texture and light alcohol notes. Enjoyable if maybe a bit intense.
