Description
Uncork this bottle to celebrate Scottish apple bounty. Sip your way through secluded walled gardens and forgotten orchards. The time honoured artisan method of keeving is rounded by fermentation in the bottle – Méthode Champenoise. This uniquely Scottish bubbly boasts honeycrisp flavour and yellow undertones. Serve chilled as an aperitif or for your special occasion. This is not cider, this is seidear.

Our cider takes at least a year from harvest to bottle. We take our time, because the results are remarkable.

Our apples come from walled gardens across the North East of Scotland. We have found that small apples from older orchards often release the most interesting flavours, when expertly handled by our seidear maker. Our apples are coming from our own orchard at Cluny Castle, from Haddo House walled garden, and from many small backyard orchards.

Christian is our chief seidear-maker [CSM] responsible for reviving traditional techniques and adapting them to the Scottish climate and its unique apples. Colin is our chief fruit officer [CFO] and knows all about orchards and apples.

750ml bottle pour at Obhal Cider Tasting, Custom House, Edinburgh 28Mar2026 (with a strand of seaweed visible inside the bottle!). Golden colour, white foam head that dissipates and aroma of seaweed, apple. Taste is tangy, seaweedy, appley, with some tartness & acidity. Medium bodied, light soft carbonation, drying seaweedy finish. Interesting, Quite drinkable.

Moderately hazed golden orange with a thin white cap that escapes to the edge.
Nose is sharp apple, herb, hedgerow, grass, straw, light funk.
Taste comprises bitter apples, hay bale, funk, light acidic nip, herb, hedgerow, farmyard vibes.
Medium bodied, soft carbonation, drying close with a funky edge.
Solid kit.

13/8/2025. Bottle shared by danlo, cheers Ed! Citric, apple aroma. Nice tangy tart taste. A little sherbety and salty. Lively carbonation. Good.

750ml wired cork bottle from Aeble. Opened with a pop. Golden colour, short-lived big foamy head that quickly dissipates to a thin rim and aroma of quince, floral, citrus. Taste is tart, tangy, quincey, fleshy, flowery, with notes of ripe apple, white wine, and some zingy acidity. Medium bodied, spritzy carbonation, dry acidic finish. Nicely drinkable.

Taste is sweetish, fruity, appley, ripe, tart fleshy, red apple, some skin & citric notes, with mellow acidity. Medium bodied, light carbonation, medium-dry finish. Nicely drinkable.

Taste is sweetish, tangy, apple, fruity, with funk, some tartness and mellow acidity. Medium bodied, foamy spritzy carbonation, drying acidic finish. Nicely drinkable.

Taste is sweetish, tart, apple, fruity, some funk, caramel hint, with acidity and bittersweet tannin. Medium bodied, soft foamy carbonation, dry fruity finish. Nicely drinkable

Taste is sweetish, fruity, appley, with some skin and core, alittle musty funk and drying acidity. Medium bodied, spritzy carbonation, dying fruity acidic apple finish. Nicely drinkable.

Pour at Edinburgh Cider Salon, Montrose restaurant 01Dec2024. Hazed amber colour, no lasting head and aroma of apple, mulling spices. Taste is apple strudel, spice, cinnamon, some tartness, citric, and warming. Medium bodied, low carbonation, spiced finish. Quite drinkable.
