Nel rispetto delle rigorose regole dettate dall’International Trappist Association, di cui l’Abbazia delle Tre fontane fa parte dal 2014, la birra viene prodotta sotto la severa supervisione dei monaci ed i profitti utilizzati esclusivamente per garantire il sostentamento della comunità, per opere di carità e per preservare il patrimonio storico culturale del complesso abbaziale. Complesso che affonda le sue radici fino al lontano 67 d.C. anno che vide in questi luoghi il martirio dell’Apostolo S.Paolo.

Appearance: Orange golden, more or less clear. Cloudy later. Small, fizzy off-white head. Aroma: Ripe, medium fruits. Honey sweetness. Some spices. Taste: Ripe fruits, some herbs and spices. Floral. Honey sweetness. Slight yeast. Enjoyable. Bought: amstein.ch, 330 ml, CHF 6.69 Info: 26/12-2021, BB: 30/4-2023

330ml bottle bought as part of a delivery from Beautiful Beers and drunk at home. Dark almost reddish gold and clear with a large ring of off-white head. Sweet spicy aroma - some pepper and honey - with light yeast. Bittersweet herbal taste with more honey, some stewed fruit, capsicum. Peppery and fruity notes in the aftertaste. Heavy carbonation. This is pretty special indeed.

330ml bottle. Minimally cloudy, brown-ish, ruby colour with average, thick, frothy to creamy, moderately lasting, minimally lacing, off-white to beige head. Yeasty fruity and slightly nutty, toasty, malty aroma, hints of plum and cherry, dried dark fruit, raisin, date, whiffs of chestnut, coffee. Taste is slightly nutty, minimally chocolately, dark malty and yeasty fruity, notes of dried fruit, raisin, a touch of date, plum, cherry, some milk chocolate, chestnut, whiffs of orange peel. Slightly creamy, watery texture, smooth and soft palate, fine, soft to flat carbonation. Pretty rich and complex, thereby mild and harmonious - good.

Flessie thuis na Sniester (kutnaam). Eerste live muziek in 2 jaar ofzo, thuis afkicken met 1988/01/23 reciprocal studio sessie van Nirvana. Het bier stond koud en is een dubbel, zacht en glibberig als een bitter zwarte moutpaling. Beetje monnikenpij ook.

Bottle shared, dark brown beer, small head. Aroma is sweet, fruit, caramel, malt. Taste is the same, sweet, malty, fruit. Not bad

21 August 2021. At Gents Bierfestival. Cheers to the Ghent beer crew! Clear brown, small, foamy, tan head. Aroma of dried fig, date, candied plum, toffee, hint of mint (chewing gum even), earth, apple peel, clove, nutmeg, brown bread. Taste has sweet apple, pear & fig in a toffee-malty body, bit nutty, bready, with herbal & spicy bitter notes. Herbal hoppy finish, clove-like phenols in the back, bit toasty, lingering dried fruit & sweet caramel, warming liqueur-like alcohol. Medium body, oily texture, soft carbonation. Well, you could almost call this the 'ultimate' Dubbel. Very nice and just my cup of tea.

0.33 l bottle from 'Drankgigant', best before July 2023. Clear, ruby with a thin, frothy, almost stable, beige head. Sweetish-malty, gently fruity, slightly yeasty-spicy and a little roasty aroma of caramel, chocolate, nuts, raisins, some clove and a touch of overripe banana. Gently sweet, moderately bitter, malty, quite yeasty-spicy, slightly fruity taste of caramel, nuts, chocolate, clove, overripa banana, raisins and some coconut, followed by a short, slightly bitter, quite yeasty-spicy, moderately roasty finish. Medium body, gently effervescent mouthfeel, average carbonation. Decent Dubbel, expected a lot more from it considering the breweries, haven't had a good Dubbel for ages though.

Bottle sample during Gents Bierfestival '21 - shared with Tderoeck and Nathan.
Couleur acajou-ambre, col crémeux blanc-cassé.
Arôme est plaisant avec de suite de belles effluves de fruits noirs et secs levure esters, qcq notes de grains avec un malté apportant un léger bouquet de caramel, toffee.

Palais reste dans une approche classique de Trappistes - un fruité noir distinct avec ce côté raisin, pruneaux, date, levure oscillant vers le côté belge niveau des esters - clin d’œil à Rochefort ? Fini sur un léger sucre candi résiduel.
Bonne bière - quel changement dans cette mer de neipa et autre ipa fruitée à l'excès.
