Ten years later, following a career in the brewing sector for Julien, and in the wood industry for François, the 2 friends undertake the project of setting up their own brewery in Basècles at the old Amorison sawmill. Two years were needed to acquire the equipment (acquired on occasion from several Belgian breweries who did not hesitate to help the two young people to get started) and to restore the premises, and it was in November 2012 that the fireplace in the brewery let out a sweet smell of hops for the first time
The objective? The production of a local artisanal beer, brewed with natural regional products. The barley is cultivated by two farmers on the land in the village 1 km from the brewery and is transformed into malt at the Château malt house located 7 km from Basècles. The hops are partly sourced from the hop plant grown on the brewery's land. The wood, historical heritage of the site, will be used for the manufacture of the bins at the brewery. The choice fell on poplar, a tree from Hainaut.

The first beer by this new Wallonian brewery, with quite thick, frothy and stable, off-white, densely packed head consisting of minuscule bubbles; cloudy yellow blonde colour with a ’fog’ of pale yeast bits floating everywhere. Sourish and estery aroma of green apple, raw rhubarb, wet hay, soap, calvados, ’graanjenever’, pond water, dust, very old nutmeg powder, peach, lime, passion fruit and sourdough. Fruity onset, crisp and refreshing, sour berries, overripe peaches, starfruit, Granny Smith apples, medium carbonation, a bit minerally, soft and medium bodied mouthfeel, supple, very yeasty taste profile with bready pale malt sweetishness, yeasty sourishness with somewhat drying effect, spicy and almost saison-like accents as well as something vaguely chalky (very likely related to the mineral composition of the brewing water), herbal hop bitterishness in the finish, but it’s mostly the yeasty fruity esters and malt sweetness which linger; a clear, warming, unmistakable ’oude jenever’-like alcohol effect also appears and even burns the throat a little bit - clearly this should not be the case in a 6.5% ABV beer, but somehow it doesn’t really bother me. Still, all things considered, this is quite okay (certainly for a new brewery), albeit less appealing than its amber brother. It has this ’yeasty messiness’ which is common among Wallonian craft beers, very estery, ’dirty’ and in this case a bit sourish (and I can see this can be bothersome to many); if they clean this up a bit, I’m sure this would be a more than decent blonde.

Clear purple brown beer, creamy irregular beige head, pretty stable, bit adhesive. Aroma: lots and lots of banana, mocha, caramel, very sweet, sugary, dried fruits. MF: ok carbon, medium body. Taste: lots of banana, yeasty, bread, bit sweet, caramel, little hoppy. Aftertaste: caramel, yeast, bread, rubbery, bit of a chemical bitterness, banana peel.
