Ten years later, following a career in the brewing sector for Julien, and in the wood industry for François, the 2 friends undertake the project of setting up their own brewery in Basècles at the old Amorison sawmill. Two years were needed to acquire the equipment (acquired on occasion from several Belgian breweries who did not hesitate to help the two young people to get started) and to restore the premises, and it was in November 2012 that the fireplace in the brewery let out a sweet smell of hops for the first time
The objective? The production of a local artisanal beer, brewed with natural regional products. The barley is cultivated by two farmers on the land in the village 1 km from the brewery and is transformed into malt at the Château malt house located 7 km from Basècles. The hops are partly sourced from the hop plant grown on the brewery's land. The wood, historical heritage of the site, will be used for the manufacture of the bins at the brewery. The choice fell on poplar, a tree from Hainaut.

Diole de Noel 8.5%. Bruin bier met mooie stevige schuimkraag. Smaak is bitterzoet met iets van rode wijn, wat pruimen, een vleug karamel en geroosterd brood.

Bottle from Drinks Vanuxeem, Ploegsteert, Belgium. Pours a hazy light golden/yellow colour with a medium sized creamy white head. Aromas of yellow fruits, bananas, citrusy lemon, peppery spice, some floral and tart sour notes. Taste is again very tart for a Triple, more lemony notes, a touch of banana and some more peppery spice and floral hints. There’s definitely a tart vinous edge to this one. Medium body with a light spritzy mouthfeel and tangy finish. Decent enough but a little too vinous and tart for me personally.

Bottle from Drinks Vanuxeem, Ploegsteert, Belgium. Gusher. Pours a murky amber colour with a large foamy off white head. Aromas of apricots, tangerines, some caramel and bread. Taste is quite citrusy with more oranges and orange peel bitterness, a touch more caramel and also subtle floral notes. Thin to medium body with fairly low carbonation. A decent hop forward beer but nothing out of the ordinary. Edit: At the end of drinking this beer i am now also getting hints of cinnamon too.

330ml bottle, online from Beers of Europe, Norfolk. Pours dark amber chestnut with a beige cap. Toasted malts, red fruits, candy sugar, yeasty, light spicy. Moderate sweet & bitter taste. Medium body with moderate carbonation.

33cl bottle. A clear dark amber beer with a mid-sized good lasting beige head. Aroma of caramel, some nuts, spicy hops. Taste of mid sweet and strong caramilzed malt, toffee, some nuts, hints of speculatiius.

Bottled (Biere de Noel 9%). Deep rubyish black colour, mediumsized beigeish brown head. Aroma is yeast, alcohol, spices, some dried overriped fruits, mild toffee. Flavour is also a blend of these, with alcohol and the spiciness coming through slightly in the finish.

Bottle from Drinks Vanuxeem, Ploegsteert, Belgium. Labelled as ‘Beer De Noel 8.5%’. Pours a dark caramel brown colour with a thinnish throthy beige head. Aromas of dry dark fruits, caramel and brown bread. Taste has more of the dry dark fruits, caramel and brown bread. Nicely balanced. Medium body with a lively fizzy mouthfeel. Very decent winter beer.

Huge, dense, very lightly yellowish head, irregular, over fully hazy orange beer; lacerings. Floral, alcohol, fresh garden herbs, blossoms. Neutral-bitterish, bit of caramel without the sweetness. Leafy, earthy, bit of rosewater. Very slick, at least medium bodied. Alcoholwarmth and -flavour, especially in the aftertaste. Quite good strong blonde! Txs to Stef!
