Description
The Brasserie des Carrières project was born from the passion of 2 friends for local products, in particular beer, a national specialty recognized internationally. In June 2000, after leaving secondary school, eager to learn more about Belgian brewing specialties, Julien Slabbinck and François Amorison decided to embark together on a journey by moped, with the aim of visiting the main Walloon breweries.

Ten years later, following a career in the brewing sector for Julien, and in the wood industry for François, the 2 friends undertake the project of setting up their own brewery in Basècles at the old Amorison sawmill. Two years were needed to acquire the equipment (acquired on occasion from several Belgian breweries who did not hesitate to help the two young people to get started) and to restore the premises, and it was in November 2012 that the fireplace in the brewery let out a sweet smell of hops for the first time

The objective? The production of a local artisanal beer, brewed with natural regional products. The barley is cultivated by two farmers on the land in the village 1 km from the brewery and is transformed into malt at the Château malt house located 7 km from Basècles. The hops are partly sourced from the hop plant grown on the brewery's land. The wood, historical heritage of the site, will be used for the manufacture of the bins at the brewery. The choice fell on poplar, a tree from Hainaut.

Bottle from Drinks Vanuxeem, Ploegsteert, Belgium. Pours a hazy light golden/yellow colour with a large fluffy white head. Aromas of yellow fruits. Taste has more faint fruity notes, a touch of lemon and some peppery spice. Thin body with a lively spritzy palate. Very watery with not a lot going on. Drinkable and inoffensive but no real flavour. A bit disappointing.

Bottled 250ml. -Amberish/red coloured, small white head, light grapes in the nose. Sweet malty, sugary, slightly perfumed grapes, moderate candy and fruity with sweet finish. A way too sweet.

Bottle, backlog January 2016. Almost clear brown/amber body under a big, fading, tan head. It’s a slow gusher. Aroma has sweet malt, caramel and spices. Taste is sweet malt, caramel, spices, dry fruit and hint of warming alcohol. Fine body and OK aftertaste. Decent.

Tight light brown head left a large creamy cover on a rich brown body. Chocolate, demerara & toffee aroma. Medium bodied, smooth with an airy clean back. Malt, chocolate, toffee & caramel tastes with a tangy finish. Solid

Bottle at home in Hackney - picked up from Beautiful Beers online. Well, the label definitely is Diole de Noel but the ABV is 8.5%. Anyway. Pours mostly clear, deep brown with a frothy, khaki topping that fades away surprisingly quickly. Light to medium sweet flavour with notes of tangy dark fruits, light metallic notes, a bit of booze, very very faint yeast expression. Medium bodied with fine to average carbonation. Lightly warming finish, some further vague tangy dark fruits, mellow brown bread. Really lacks any richness, Belgian yeast, bready malts, hearty fruits. It's drinkable but just a bit uninspiring.

33cl bottle. A minimal hazy yellow golden beer with a big white head. Aroma of pale malt, straw and some yeast. Taste of mid sweet pale malt, belgian yeast, sweet fruits.

Bouteille 25cl, BB 16/03/2022.
Fin rosé-cuivre, col crémeux rosé tenace.
Arôme au bouquet fruité raisin avec un léger retour de gingembre qui porte une petite note épicée. Petite note de grains-malts en retrait.
Palais est frais léger un peu sucré en retrait avec une touche restant assez belge sur la base maltée pils - base de la blonde. Retrouve un fruité de raisin rehaussé par une pointe épicée de gingembre. Pas mauvaise, fraîche en terrasse, avec néanmoins ce côté fruité sucré qui perdure.

A brown beer, a head is big and blond. Aroma has sweet and dried fruitness, prune, still fresh, light flowers. Taste has fruitness, spicyness. Medium bodied. Aroma is great, but the taste is slightly empty.

Dark brown colour with thin head. Aroma and flavour are quite sweet with sone brown sugar and caramel. Slightly cakey. A touch of a metallic taste too.

La brasserie Diôle nous propose ici une triple qui n'en est pas réellement une. Nous sommes davantage ici sur une triple tirant sur une saison, avec une légère acidité et un côté fruité marquée lui donnant un air printanier. Côté triple, on retrouve cet alcool, à 9 % structurant et donnant du tempérament, des épices bien dosée pour relever l'ensemble, et des arômes de céréales. Personnellement je trouve l'ensemble agréable, frais, tout en gardant un petit caractère sympathique. Cela déconcerte tout de même quelque peu et l'effervescence trop poussée par contre n'aide pas. Le visuel est sur un blond pâle légèrement voilé avec une fine effervescence et une mousse blanche de 3 mm. Le nez est légèrement acidulé avec citron, céréales, et des fruits (pomme, pêche notamment). A la dégustation, l'effervescence, bien trop soutenue, ne permet pas aux arômes de bien se stabiliser. A noter également une astringence marquée. L'attaque est fraîche avec des épices (dont coriandre) qui enrichissent les arômes présents au nez. En deuxième bouche, l'alcool s'affirme pour donner le caractère nécessaire à une triple. L'alcool s'affirme encore plus en arrière-bouche donnant un bon contraste. Petit bémol sur le final, qui manque quelque peu de caractère. Une triple qui change des triples.
