Description
The Brasserie des Carrières project was born from the passion of 2 friends for local products, in particular beer, a national specialty recognized internationally. In June 2000, after leaving secondary school, eager to learn more about Belgian brewing specialties, Julien Slabbinck and François Amorison decided to embark together on a journey by moped, with the aim of visiting the main Walloon breweries.

Ten years later, following a career in the brewing sector for Julien, and in the wood industry for François, the 2 friends undertake the project of setting up their own brewery in Basècles at the old Amorison sawmill. Two years were needed to acquire the equipment (acquired on occasion from several Belgian breweries who did not hesitate to help the two young people to get started) and to restore the premises, and it was in November 2012 that the fireplace in the brewery let out a sweet smell of hops for the first time

The objective? The production of a local artisanal beer, brewed with natural regional products. The barley is cultivated by two farmers on the land in the village 1 km from the brewery and is transformed into malt at the Château malt house located 7 km from Basècles. The hops are partly sourced from the hop plant grown on the brewery's land. The wood, historical heritage of the site, will be used for the manufacture of the bins at the brewery. The choice fell on poplar, a tree from Hainaut.

F: tanned, big, not long lasting. C: dark brown, hazy. A: malt, molasses, herbal, caramel, hint of coffee tones, dried fruits, dates. F: huge, snow-white, good retention. C: blonde, light hazy, a lot of yeasty debris floating in. A: malt, floral, fruity, peach, hint of orange peels, soapy, yeasty. T: malt, grassy, floral, peach, orange peels, yeasty, mineral, slightly oily mouthfeel, decent spicy, medium body, medium to high carbonation, 33cl bottle from Carrefour market – St. Michel @ Etterbeek, Brussels.

Bottled 330ml as "Biere de Noel - Kerstbier" ABV 9 % (Beergium)
Very dark ruby color, small steady beige head. Aroma is yeasty, sticky harsh notes from yeast then very boozy alcohol, dark malts. Medium-bodied, crisp carbonation. Candy sugar, toasted malts, prune, yeast, alcohol, hints of licorice. Messy and alcoholic.

Shared bottle of Diôle Bière de Nöel at RB/HD at Bjørnøy 29.12.16. Drown. Diminishing pale brown head. Aroma and taste of dark malt and liquorice. Similar taste and aftertaste, with medium bitterness. Quite dry.

Shared 330 ml at local tasting, as Diôle Bière de Noël, ABV is 9%. Is this really the same beer as the Brune? From Vinmonopolet, Nettbutikken. Dark brown colour, beige head. Nice malty aroma, notes of brown kandij sugar and mild spices. Malty flavour too, brown kandij sugar and mild spices again, vinous notes, warming mouthfeel.

Fra flaske (9%) på romjulstreff i RBHD des-16: mørk brunlig rav med flott skum som varer. Kandispreget aroma med røde bær. Smaken likeså - god og litt vinøs, men allikevel noe endimensjonal. Mild bitterhet i den saftige avslutningen gjør det lett å helle innpå.

F: big, creamy, off-white. C: orange amber against the light, to brown, hazy. A: malt, fresh fruitiness, peach, hint of pineapple, floral, banana, honey, passion fruits, toast. T: malt, touch of pineapple, banana, peach, yeast, citrus, floral, spicy, medium body, medium carbonation, good balanced, aroma is better than the taste, 33cl bottle from Carrefour market - Saint-Michel @ Etterbeek, Brussels.

dark brown colour, one inch dense beige-ish head;aroma of cocoa, dried fruits, some anise and herbal notes; taste is practically tha same with burnt-syrupy notes; would be better with a bit less intensive carbonation - but anyway, it is still quite enjoyable
