Description
Based in Edmonton, AB, we’ve set up our production brewery to be 100% exclusive to mixed fermentation sour and wild beers. Our initial barrel investment allows us to guarantee that all of our beers spend time on oak during the maturation period before they are released. Additionally, all of our beers go through a minimum four stage fermentation lifecycle: initial primary fermentation, secondary fermentation on oak, a homogenizing fermentation after blending, and finally a fourth fermentation in bottle to produce the tight, silky effervescence characteristic of these unique beer styles. Some releases will also include a fifth fermentation (fruited blends) between the other fermentation steps.

Reddish. Bright. Acetic, some blueberry but there is just no sugar here. Okay body, holy smokes that’s tart.

750 ml bottle. Pours a dull amber with little head. Aromas of musty grapes, earthy fruit and heavy wheaty malts. Flavors of Brett, tart orange, earthy fruit and more heavy wheaty malts. Nice mix.

Opaque with no head. Acetic nose, and a similarly acetic palate. Raisin, apricot, and it's overall very sour.

Hazy amber. The aroma is mild, especially for this brewery. The cranberry character is okay, and it's surprisingly not that acidic.

Can pour at Barrel Fest 2025, pours a cloudy dark orange with a small white head. Nose has plenty of acidic cranberries and muddled, earthy yeastiness. Flavour is messy, with acidic cranberries, muddled yeast soup, earthiness. Ugh… again, another flop due to the bad base. Yeasty, muddled, acidic. Poor.

Can pour at Barrel Fest 2025, pours a cloudy golden orange, no head. Nose has moderate acetone, some stone fruits, and earthy, armpity wild yeast. Flavour is gently fruity, with moderate acidity, some muddled berries, and some earthy, armpity notes. Bad base beer that can’t be rescued by the berries. Not great as usual.

750mL bottle, pours a clear copper with a small white head. Aroma has a musty, earthy, rustic saison yeast, and muffled oak. Flavour is highly acidic, with an unfortunate amount of acetone, rustic saison yeast, and muffled earthiness. Not a pleasant yeast character and way too acetonic. Just not good.

Bottle pour at Barrel Fest 2025. Pours murky dull gold with minimal head. Peach skins and moldy yeast on the nose. Flavour has super acetic peaches, moldy, murky yeast. Dull and acidic. Poor.

Amber. Bright. No head. The aroma here is a bit acidic, fungal, and then we have a bit of acetone. On the palate, tart. Acetic. A touch of acetone. So, this, was it basically a Trial & Ale beer blended with a golden ale from Irrational. Sort of oaky. But this doesn't really work. Again, the base is overly acidic, lacks complexity, and there's only so much you can do with that.
