Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Poured from a 500 ml bottle.
Aroma is dark chocolate, dark caramel, roast, treacle and toffee with lighter molasses and burnt sugar. Hints of soy sauce and dark fruits. Light bourbon, cognac and faint oak notes. Medium alcohol notes.
Pours jet back with a small, thick, mocha head that recedes quickly to the edges and disappears. No lacing and sheets for legs.
Flavor is fairly sweet with lots of chocolate, treacle, roast, dark caramel and dark toffee. Moderately high bitterness and moderate alcohol notes. Light bourbon and cognac notes with a bit of oak.
Mouthfeel is full bodied and a bit silky with medium low carbonation. Low astringency and moderate alcohol warmth.
Overall, a solid BA imperial stout. Nice bourbon and cognac notes, albeit light. Good malt profile and a bit of bitterness to balance out the malt sweetness. Good, but there are definitely better stouts out there for the price.

Poured from a 16 oz can dated November 11, 2025.
Aroma is malty with toasted breads, caramel, crackers and biscuit. A touch of cherry and raisin. Light woody, herbal hop notes with a touch of spice. Hints of alcohol.
Pours a fairly clear amber, auburn brown color with some copper notes and a medium sized, thick, fluffy, light tan head that recedes quickly to the edges where it lingers. Light lacing and small legs.
Flavor is a bit sweet with fairly strong malt notes of crackers, toasted breads caramel and biscuits. Hints of raisin and cherry. Medium bitterness and light alcohol notes. Light woody, herbal hop notes.
Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth.
Overall, a solid English Pale Ale. Not a style I reach for, but the malt complexity is a nice break from the world of hop heavy IPAs. A pretty sessionable beer.
