Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle contributed in absentia by Felipe - thanks! Bit of a gusher on opening, but not bad. Pours cloudy hazel with a medium tan head and good lacing on the glass. Aroma is light rum, toffee, raisin, funky basement. Flavor is medium sweet, lightly funky, oak, vanilla and some nuttiness. Lightish body, high effervescent carbonation. Good effort!

Bottle @mini SARA tasting - thanks Brian! I must admit I approached this one with some trepidation. Opened in the sink and indeed it was a bit of a gusher, but nothing crazy. Poured cloudy golden with a huge creamy off-white head that dissipated relatively quickly for its size leaving good lacing. Aroma is indeed very funky, cheese, foot, basement, some sharp mustiness, fruit skins. Flavor is light sweet, quite funky, oaky with a brandy finish. Taste is considerably better than aroma. Light body and quite dry. Not bad.

Bottle@ a mini SARA share - thanks Nolen! Pours opaque black with a small tan head and good lacing. Aroma has a bit of funk, and lots of roastiness underneath. Perhaps a touch of coffee, a bit of raisin. I am not getting the chocolate that others notice. Flavor is medium sweet, lightly funky and medium sour. Funkiness opens up a bit as the beer warms. Lightish body, high effervescent carbonation. Nice beer.

Poured from a 750 ml bottle. Medium light acidity with moderate malt notes of toasted bread, caramel and toffee. Lots of fruit notes of raisin, plums, prunes and cassis. Pours brown with some light brown highlights on the edges. Moderately think, tan head that recedes to the edges. Medium leaving and light legs. Flavor has a medium light acidity with lots of dark fruit character and some lighter malt notes. Lots of plums, prunes, figs, raisin and cassis with some tart beer. Light toasted bread, caramel and hints of roast. Mouthfeel is medium bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall a pretty nice dark beer with a lot of funk and light acidity. Really nice fruit character.

Bottle shared at that Indian restaurant in Islington, London. Big thanks to Bruce. Exquisite beer. Just beautiful, with great balance throughout, nice lemon and tangerine, mellow citrusy tang. Light bodied with fine, massaging carbonation. Finishes with essentially perfect balance, mild sweetness, restrained funk, slight lemon peel and further moderate citrus tang. Gorgeous.

Bottle thanks to David. Pours a cloudy orange with medium frothy off white head that diminishes. The aroma is a strong orange peel, citrus, funk, yeast. Thin mouthfeel with nice citrus, lacto, funk, and light sour finish. Easy to drink, really impressive.

Tap. Pours cloudy golden Amer, small white head, good lacing. Aroma is a bit dank, earthy, pine, spruce. Flavor follows, very light sweet, light bitter, mineral taste, earthy, evergreens, a bit dank. Crisp and light bodied, just a hint of lingering bitterness. Well crafted, as would be expected.

On tap at the brewery. Nice pale malt aroma with cracker and biscuit. Moderate hop character that fairly fruity with quite a bit of virus and tropical fruit. No garlic or onion at all. Pours a cloudy pale yellow gold with a small, thick white bread with really good retention. Medium lacing and small legs. Flavor had a nice light sweetness with hints of cracker and biscuit. Medium bitterness with some nice fruity hop flavor and some citrus notes. Mouthfeel is medium bodied with medium carbonation. Soft and silky. Low astringency and low alcohol warmth. Overall another really nice beer in the simple series. Surprising how the hop flavor and aroma isn’t at all like Summit when its fresh.

Bottle @ What the Funk Denver 2014. Pours a cloudy orange appearance with a white head. Super juicy peach / apricot aroma with some funk. A bit of wood and spritz as well. Dry and yet very quenching flavor. Full of fruit (apricot / peach / pear). Definitely get some dryness on the back end with some vinous notes. Moderately sour. Really a fun beer though it wasn’t crazy complex. Glad to finally have tried this.

Bottle @ What the Funk Denver 2014. Pours a black appearance with a thin brown head. Kind of a strange beer but quite good. You can definitely get the rum and its spiciness in the nose. There’s also some chocolate and roast and mild caramel. Also some dark grape and plum notes. The flavor is fairly tart and tannic. Some plum and berry fruit notes in the flavor. A little boozy but the rum complements the beer surprisingly well. Way better than I expected.
