0.375 l bottle from 'Etre Gourmet', 2019 vintage. Hazy, orangeish amber with a thin, frothy, slowly diminishing, white head. Sweetish, slightly sourish, gently vinous-fruity aroma of red wine, overripe lemon, honey, black tea, candied apricot and vanilla. Slightly sweet, moderately sour, gently vinous-fruity taste of red wine, honey, vanilla, overripe lemon and oak, followed by a medium long, gently tart finish. Medium body, smooth and almost oily mouthfeel, soft carbonation. Quite complex, very well-balanced brew, maybe a bit past its peak.

Pretty pale even for a straight cider, 20% lambic did not do much to colour it. Very dry, low sweetness. Medium tartness, light sourness. Fully apply, pretty simple, but tasty apple character. Light funk. Only sprinkled with lambic elegant though, good.

Is this a 35 year best before? That's about all I can figure, making it a 2022 bottle.
Very deep, rich, bronze-copper shows the red wine influence. Small, off-white head quickly fades to ring. Good clarity, with a hint of haze despite a careful pour.
Big lacto character with strong oak and moderate red wine notes. Very mild barnyard and mild, fruity Brett with good wheat blandness softening the overall acidity, which seems pretty high. Definitely no funny business going on here; seems a proper gueuze.
Lighter body than expected. Soft wheat but no real chew or oak tannin to it, which is surprising. It's also much, much less acidic than expected, showing more red wine fruit and mild Brett with almost no sourness. Tart at best, with rustic grain, more light wine qualities and pleasant, easygoing oak. Would like more acid, some funk and just better all-around structure and lambic quality.
