Bottle - Caramel, butterscotch and light Woody notes. Cloudy caramel with a small white head. Sweet butterscotch and caramel with a light spicy molasses. Wood is odd, gives it a very sweet character.

Tasting at Matt’s
Dark amber color, unclean, with compact head. Strange aroma, a bit boozy and dusty, rotten food. Strong body, sweetish candi sugar and caramel flavor, a bit fruity, cake, candies, wood, and a stale feeling, probably from the barrel.
Enjoyable, but weird, and sticky.

300mL bottle, pours a cloudy amber brown with a small beige head. Aroma brings out notes of cardboard, followed by fruity notes and a little wood. Flavour is odd, with notes of wood, lots of fruitiness, and some caramel. A little cardboard in there. Bizarre stuff. The wood is quite stale tasting. Not terrible, but it's off the mark.

Cloudy, looks like pale mud. Fruity, vinous and floral, with a hint of alcohol and a lot of wood. Sweet, and floral and honeyish, with alcohol dryness and a hint of hop, nice vinous character.

12 oz. bottle, pours a cloudy golden with a medium white head. Aroma brings out Belgian yeast, candied sugar, and red wine. Flavour is along the same lines, with Belgian yeast, red wine barrels, and cereal notes. Strange idea to barrel aged a tripel in red wine barrels, but it works okay. Solid.

Tasting at Matt’s
Cloudy blond color. The aroma is very corky. Smooth, highly carbonated, dryer than sweeter; it has a quite good fruity character from the wine barrel, and a strong cork feeling.
A bit weird, not bad though.

Bottle - Lots of tartness, stone fruit and Woody notes. Cloudy gold with a decent white head. Sweet, raw oak, very effervescent and a nice finish. I like it.

Dark brown. Bubbly head. Lots of mace, cinnamon, vanilla, light dark sugar notes. Nice balanced. Good malts. I like the concept, and the execution.

Very dry, has light pink pepper at the front of the tongue...some cascadey US hop but English yeast.

Hazy light tan. Aroma is older, stale hops and chewy malts. But the cacao really shows up on the palate. It’s balanced with some nice chocolate sweetness and rich, chewy earthy bitterness. Ends up being a pretty nice beer, despite the uninspiring aroma.
