Description
The Alchemist is a family run brewery specializing in fresh, unfiltered IPA. John and Jen Kimmich originally opened The Alchemist as a 60 seat brew pub in the village of Waterbury in 2003. After eight years of success and growing popularity, they decided to open a small production brewery. Today The Alchemist currently operates two breweries in Vermont and distributes Heady Topper and Focal Banger throughout the state.

On tap at the brewpub. Poured black with a dark brown head that lasted throughout the beer and laced thickly. Flavor was full of roasted malt with some smoke, chocolate and backing hoppiness. There was also a decent amount of alcohol on the nose. Flavor was similar with chocolate and roasted malts being backed by pine hops with a decent amount of alcohol in the finish.

On tap at the brewpub. Poured a dark brown with opaque edges and gray head that dissipated quickly to the edges. Aroma was a complex combination of roasted malts, sweet chocolate, vanilla and a hint of backing coffee. Flavor began with roasted malts and was joined by sweet chocolate and vanilla with the vanilla coming on quite strong in the finish. Beer went down really smooth.

On tap at the brewpub. Poured a hazy yellowish gold with a white head that dissipated slowly to the edges and laced nicely. Aroma was full of a combination of pine and citrus with a backing sweet grain/cookie note. Flavor began with pine, which was joined by a lighter citrus note (oranges) and had a sweet grain backbone. The pine was intense throughout.

On tap at the brewpub. Poured a near clear gold with a white head that dissipated to the edges and laced slightly. Aroma was mainly piney with a bit of backing grapefruit and grass. Flavor began with pine, which remained strong through out the beer as was backed by a combination of grain, hay and grass.

22 oz. bottle, sent from Glouglouburp, split with manuchampions, pours murky orangey brown with a small white head. Unusual aroma for an IPA of dark butterscotch, burnt caramel, with the hops a secondary feature - quite complex nose. The flavour doesn't match up to the aroma's complexity - earthy hops, muted malt backing, slight fruitiness, and a little caramel. Good, though I don't see how this is worth the hype. 8 3 7 4 14 3.6 / 5 2nd try: This time, from a 500mL can courtesy of adamjackson (thanks a lot, Adam). Pours a vibrant golden orange with a big off-white head and ridiculous amounts of sediment floating about, that finally settles in the bottom. Awesome aromatics, full of resinous hops, tropical fruits and a big caramel malt backing - a bit of butterscotch as noticed in the first sampling but no where near as pronounced. Flavour brings out beautiful notes of resinous hops, a little butterscotch and a big juicy caramel malt backing. Very juicy and "big" feeling, without being a palate scorcher - though this is not shy of hops by any means. Excellent stuff. 8 3 9 4 17 4.1 / 5

22oz bottle pours a hazy orange with a thin, cloudy white head. Nose is awesome, stanky hops, oily, resinous, pine tar, pineapple, grapefruit. Flavor is sweet, malty, grapefruit, lemon, pine. It’s not soapy at all, which is really nice. Lightly herbal. Full bodied, bitter finish. The finish is very bright. Really solid.

750 ml bottle courtesy of brad, thanks! Bright gold, edge head. Massive grass and Christmas tree aroma. Very bitter, lots of pine resin. Nice.

Thanks to Murchmac. Bottle. Enjoyable beer but lacking any real bitter bite and not quite as loaded down with hops as I prefer. The beer pours a cloudy, tawny orange-amber with a white head. A very nice sweet citrus and tropical fruit tone dominates the aroma. It’s almost entirely tangerine rind, mangoes and guava. There’s a hint of pine lurking in the background. However, it’s not quite as pungent as the best of the style. Surprisingly, the taste lacks nearly any assertive bitterness. There’s a bit of grapefruit pith in the finish, but this is one of the least bitter DIPAs that I’ve ever tasted. That said, it’s also not overly malty or particularly sweet. It just sorta lacks a strong taste note. The thin body and utter lack of hop oiliness in the mouthfeel emphasized this problem for me. It does have a nice hoppy aftertaste. It was an enjoyable beer to drink, but, ultimately, I found the beer rather disappointing. The taste fails to deliver on the promise of the smell. I’m happy to have tried it, but I don’t really understand the hype.

A hazed golden amber ale with a thin white head. A superb aroma of pinhey floral hops, spruce, citrus, menthol and alcohol, all smooth and enticing. In mouth, sprucey hops, malts, citrus and vermouth. Quire nice, rich and balanced IPA. On tap at VT Brewers Fest, July 17 2010.

A golden pils with a thin white head. A nice grainy chalky aroma with loads of malt. In mouth, a classy pils with Saaz hops, chalky, quite nice and interesting. On tap at VT Brewers Fest, July 17 2010.
