Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

On tap at Phillips, pours a hazy golden blonde with a small white head. Aroma is a lacto bomb, with tons yogurt, and a touch of lacto. Flavour is loaded with intensely yogurty lacto upfront, with plenty of tango lemon and a bit of rotting fruit character. Tangy and rotting finish. Not as good as it could be. Needs work.

On tap at Phillips, pours a clear golden with a small white head. Aroma brings out lots of clove, cotton candy, and banana upfront. Flavour is loaded with candy floss, banana, and clove. How is this a grisette? More like an estery, crappy hef. Very poor.

On tap at Phillips, pours a clear pale blonde with a small white head. Aroma brings out lots of yogurty lacto, with subdued champagne yeast. Flavour is mostly yogurty lacto, with little of the yeasy showing up. Not very well-constructed. It's drinkable.

On tap at Phillips, pours a hazy golden blonde with a small white head. Aroma reveals a somewhat dank hop character and a crisp biscuity malt. Flavour certainly reveals the dank citra hops quite well, with a hit of cat piss, and backed by fairly dry biscuity malt. Nicely crafted. Solid pale and good expression from the citra.

Honey and sweet sour notes. Clearish yellow with a decent white head. Bready, lemon and sour. Not good.

473ml can. Pours a clear red-brown with a medium, foamy, long lasting, beige head that leaves curtains of lace. Aroma of toasted bready malt, toffee, earth and nuts. Bittersweet flavour of toasted bready malt, caramel, dark chocolate, ash, nuts and earth in a dry, mild bitter finish. Medium body with an oily texture and soft carbonation. A good effort.

Can that pours a very slight hazed light-golden colour with a big frothy white cap, good stay and some patchy foam lace. Nice Citra hops in the nose at first, with cereal notes that come later. The taste shows the Citra giving the lemon hints to the malts. Soft bitterness in the middle, but not in the finish. Mildly dry mouthfeel in the end, but a nice difference from the Citra IPAs for summer.

473ml can. Pours a slightly hazy gold-yellow with a medium, foamy, long lasting, off-white head that leaves curtains of lace. Sweet aroma of biscuit malt, melon, grapefruit and piney hops. Sweet flavour of pale malt, oats, caramel, honeydew, grapefruit rind and light pine with a dry, mild bitter, floral hop finish. Medium body with a smooth, oily texture and average carbonation. Good, easy to drink.
