Pours dark mahogany into a tulip. Tan head with good retention recedes to skim surface. Dark pit fruit aromas. Soft with earthy heather and dried fruit upfront turning tart in the lasting bitter chocolate covered cherry finish. I’m going to miss Enlightenment...

750ml bottle. Cloudy, orangey, pale golden colour with huge, fluffy, fairly lasting, moderately lacing, snow-white head. Herbal spicy, yeasty and minimally floral aroma, notes of brine and lemon zest, gherkin, mustard seed, a touch of honey mustard, minimally sweet-ish, floral overtones. Taste is slightly tart, herbal and spicy, initially with a unique mixed note of petals and cinnamon, hints of lavender and viola, later with more tartness, hints of brine, bitter hoppy overtones; in the finish still floral, hints of honey mustard replace the cinnamon. Solid Saison with a ’very unique’ touch.

750mL bottle, batch 1 (~July 2015), drunk 8/24/15.
Large white head that settles out at cover. Bright golden liquid is minimally hazy, leaving sediment behind.
Nice blend of lighthearted Belgian yeast esters and phenols as well as a good dose of brett character. Not too heavy on either one, especially the brett, with only tart, lime-like fruitiness, a trace of earthiness and light lilac-like perfume. No alcohol or flaws and the malt seems pretty nicely attenuated from the nose; with light honey and baguette-like notes.
Minimally sweet, but with enough maltiness to create a soft texture and light bits of pleasant honey and dough. Grassy, herbal and very floral hop notes add gentle bitterness as yellow fruit-like esters and bits of citrus-like acidity emanate from the various yeasts. Bright, light and enjoyable. And of course simple, as advertised, but appealing because of it, without the typical "We brewed this with 15 different yeast cultures, 8 strains of bacteria, 5 malts, 4 different experimental hops and aged it in 3 different types of barrels before macerating 3 different fruits in it".

750 mL bottle, fresh, drunk 8/3/15.
Despite the waiter’s and my best efforts, the beer still came out pretty hazy. But a very pretty, glowing banana-skin yellow, well-carbonated with a large, thick white head that shows strong retention.
Tart brett acids in the nose are backed by a bit of sweaty, farmy cheesiness, limes, pineapple and light black pepper. A bit of tropical fruit and citrus from the hops is welcome, though this further builds acidity. Light vanilla and more pepper phenols sit on the finish, with a touch of dough and biscuits.
Lilacs and pineapple in the flavor. Heavy brett influences aren’t exactly subtle or terribly elegant, but the flavors are true enough and despite some breadiness from the yeast and waxiness/stickiness from the honey, it’s hard to not be pleased with all of this glorious tropical fruit, soft funk and bright acidity on the finish. You could criticize it by calling it a bit too punchy in its acidity, perhaps, with maybe a bit more citrus than needed from the hops, but fairly well-attenuated, tightly carbonated and with a soft, supple enough texture. Certainly not confusing this one with HF Anna, but I still enjoyed drinking the bottle and it went down easily.

Gusher, but managed to catch it. Big offwhite head. Hazy opaque pale yellow body with carbonation. Fruity mealy vinegar aroma with apple and metal notes. Dry, and faintly acidic, earthy mealy apple taste with funky metal notes. Mid-bodied. Mild, soft mouthfeel. Dryish waxy mealy apple aftertaste with funky earthy winter cherries notes. Nice, drinkable, pleasant. (0.75l bottle, from Kihoskh, Copenhagen.)
