Bellwoods Brewery began as a small brewpub in the west end of Toronto in 2012, and underwent a couple modest growth spurts over the years to encompass two retail shops (selling fresh cans and bottles), and a production brewery in North York (mostly to house The Foeder Pyramid). These days, we produce about 18,000hL a year, which is a mere blip in the grand scheme of Ontario beer, but keeps us pretty busy. The styles we’re interested in brewing range greatly, and we always remain open to new ways of making beer. For the most part, our current efforts are devoted to aromatic hoppy stuff, crisp lagers, barrel aged wild blends, fruit-forward zingers, and the occasional barrel aged stout. There’s always a new, creative project waiting in the wings. We’re still a relatively small, collaborative team, forever dedicated to the pursuit of perfect beer–thanks so much for partaking in the fruits of our labour.

Had this one in the hopper for a while. I do love me some Bellwoods, if not every one of their brews, so always wanting to try more. Bottle marked Sept 23, 2014. (A very good day.) Pours a respectable dark stout, with a thick brown head. Lots of roasted malt, a little dust, and touch of bark. Taste a little thin, lots of roasted malts, dust, touch of ash. Not thrilled by this one, but that’s alright, still looking forward to every Bellwoods that comes my way.

Bottle thanks to Sammy. Pours black tan head. Nose/taste of cinnamon, rum, oak, roast chocolate, milk chocolate, molasses, brown sugar, nutmeg and vanilla. Full bodied. A touch hot.

Bouteille 500ml, 2014, 1463/2100, gracieuseté de wilco, Thanks Mike! Couleur noire opaque, mousse moka foncé crémeuse mais fuyante laissant une légère dentelle. Arôme de lait au chocolat noir, cognac, boisé, malt torréfié, noix de pécan, caramel brûlé. Goût de cognac, chocolat, bois, malt torréfié en fin de bouche, café en arrière-goût, l’alcool est invisible. Carbonatation faible, corps dense, lourd. Un autre chef d’œuvre de la part de Bellwoods.

(500ml bottle from the brewery) Pours inky black with basically no head to speak of, a few stray off white bubbles. Aroma has really rich deep dark malts, a bit of burnt wood, a little coffee, dates, cardamom, anise, hint of ginger, other blended spice notes, black pepper when I inhale really deeply, vanilla/oak, rum notes present but far from overpowering, acting in support of spice and malt to give a dark spiced rum feel without the spirit booziness. Just a bit of alcohol in the nose. On the palate, intense rich flavors again. Core is dark malts with a fairly strong burnt roast, concentrated flavours of dates, prunes and other dark dried fruit lend sweetness, dark chocolate, balanced flavors of rum with its caramel, oak, vanilla, fruitiness and spice, anise, cinnamon and black pepper prickles the tongue on the finish. Chocolate, strong coffee and roast on the finish as well, a bit of alcohol warmth as expected. Medium full palate with fairly soft carb. Really enjoyed the integration of spices and barrel to create a rum-like imperial stout without just loading it with rum spirit heat. Deft brewing. Layers of complexity, still balanced for the ABV, very sippable, superb beer from Bellwoods, or anywhere. (For comparison, I had it on draft at the brewpub the next day and it was a bit more obviously boozy, with stronger raisin/date character and less pepper, still great).

Bouteille 500ml, 1631/2100, gracieuseté de wilco. Thanks Mike! Couleur noir abyssal , mousse lait au chocolat crémeuse mais fuyante laissant une dentelle éparse. Arôme de lait au chocolat, épices, boisé, rhum, malt torréfié, cardamome. Goût de malt torréfié, sucré, boisé, chaleur d’alcool, épices surtout en fin de bouche. Carbonatation faible, corps dense. Les épices sont très bien intégrées et ne sont pas trop présentes, l’alcool est quant à lui presque indétectable. Un autre chef-d’œuvre de Bellwoods!

Bouteille 500ml, gracieuseté de wilco. Thanks MIke! Couleur rouge vin très foncé presque opaque, mousse moka fuyante mais qui renaît au moindre mouvement du verre. Arôme de fruits confits, boisé, brett cuiré, malts caramélisés, raisin sec, un peu vineux, alcool. Goût de malts caramélisés voir torréfié, chaleur d’alcool, boisé, noix rôtie, fruits confits, dattes, plutôt sucré, très longue en bouche. Carbonatation élevée voir piquante mais qui s’adoucit rapidement, corps dense. Une très bonne bière, bien complexe. Bellwoods, I’m in love.
