Drab auburn with darker chestnut hues a light haze and a small, beige head atop showing moderate retention.
Some toffee and red fruit in the nose showcase the specialty malt as hints of mild, fruity Brett rise up, as well. Good tartness forming but it mixes with the malts to form a very round, dry, almost woody character. A touch of vanilla through the middle, with more cherry, strawberry and apple-like esters ending on just a touch of toasted character that further dries things out. No alcohol or flaw.
Fairly soft in the mouth, given the specialty malt, but as a good BdG should be. Not richly-malted, but soft enough with low but tight carbonation and lots of dryness on the finish. Toffee, apple, strawberry and vanilla lighten the mood as light wood tannin and hints of earth and funky Brett are felt just below the surface. Quite a bit going on here and it definitely isn’t a classic BdG, despite traditional ingredients. Maybe just a bit more malt richness would help here, though it’s a very difficult line to tread, not wanting the beer to be too malt forward/rich, as I can understand. Anyways, nice stuff, love the complexity derived from the various yeast, hops and malts.

Glowing amber-ruby. Head immediately fizzles away. Translucent clarity.
Woody, earthy tones including light smoke, black pepper and cherry pit rise up but are quickly balanced by a honey and caramel-like maltiness. The finish if full of soft minerality. Smells just like pu-erh tea; lots of sticks and such. Very understated, not overdone with the acidity and rounded out by the malt nicely. No alcohol or flaw.
Sour acetic acids confront the palate initially as bready specialty malts give way to lots of wood, dirt, mushroom-like umami and finally a much brighter red fruit character. Malt is highly attenuated; too much so, leaving a dearth of texture with too much sourness/dryness lingering. Lots of pu-erh tea-like flavors. Tight, engaging carbonation with no alcohol. VERY dry.

From tap. Pours hazy orange with a small white head. Aroma is dry, herbal and slight citrusy. Citric. Fruity. Dry. Sour and lingering citric. Dry, fruity and citric far finish.

Draft. A hazy amber beer with a beige head. The aroma has notes of malt, caramel, fruit, and a bit of brett. The flavor is acidic with notes of lemons, brett, and straw, leading to a tart finsh.
