Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

Bottle: Poured a pale golden color ale with a nice large foamy head with OK retention and some light lacing. Aroma of tart notes with light oak and herbal notes is quite pleasant. Taste is a nice drinkable mix of tart notes with some herbal notes and light peppery spelt notes with subtle acidic notes. Body is about average with good carbonation. Ice sour with just enough complexity and good drinkability.

Pours hazed gold into a tulip. White head with little retention recedes to nothing. Citrus aromas. Soft with tart pit fruit and citrus upfront turning to mild earthy funk before the sweet medium length lemon and juniper finish.

375mL bottle drunk 6/8/18.
Clear brass-golden with a small white head fading steadily to a ring.
Acetic acid perks up immediately, with strong herbal notes that are quite powerful adding strong pine-like notes, big earthy notes and almost a minty astringency. Deep and complex and quite nice, really coating the nostrils, but yet it doesn't come off crude or overdone, really. No alcohol or flaw. Not too much sourness. While the yarrow is quite strong, it's pretty much on par with the hop level of a nicely aromatic, strong DIPA.
Earthy, woody and showing a good maltiness with an enjoyable tartness but no heavy sourness. Engaging carbonation and good attenuation with interesting herbal notes that are less prominent than in the nose. Acetic character relaxes quickly to just moderate tartness.
