Description
Founded in 1784 by Jean Baptiste De Bruin and still a family brewery to this day; known as Brouwerij Schelfaut until 1919, when the name was changed to Brouwerij Bios by Paul Van Steenberge, who became the head of the operation in 1922. Currently operated by his great-grandson Jef Versele (since 1998). Underwent many technical upgrades and expansions since then, most notably in 2017 when new buildings were installed and production capacity was significantly increased.

Old rating - St Stefanus Blanche version from Waitrose in a 330ml stubby bottle. A fairly ordinary wit beer. Disappointing considering the St Stefanus Blonde is a lovely beer, but then now I realise it's a just a branding excise.

On tap at Het Waterhuis aan de Bierkant, Ghent, Belgium. A hazy golden orange coloured pour with a healthy white head on top. Hoppy, bready, malty, yeasty, fruity taste/aroma. Decent enough.

Lot No2 2025 edition. Bottle at De Garre. It pours clear deep amber with a fluffy slightly off white head. The aroma is soft, smooth sweetness, vanilla pudding, sponge cake, creme brulé, biscuit, custard, bourbon soaked oak, apple crumble, fruit cake, raisin, sultanas and toasted almonds. The taste is smooth, hides alcohol well, biscuit, sponge cake, fruit cake, marzipan, vanilla custard, raisin, sultana, bread and butter pudding, pleasing warmth, bourbon soaked oak, dull tannin, chewy toffee, light spice and green banana on the backdrop. Finishes up dry with fleeting spice. Medium body and moderate+ fluffy carbonation. Love this. Great depth of flavour and the barrel aging does justice to the base beer. Awesome.

(Bottle) Hazy amber colour with frothy, tan head. Fruity, malty nose with caramel, brown sugar, dried fruit, figs, sultanas, oak wood, whisky and a touch of peat. Malty, fruity, vinous taste with notes of caramel, dried fruit, sultana raisins, figs, apricots, brown sugar, oak wood, whisky, peat and a mild spicy bitterness in a warming finish. Full body, quite sweet. I don't get much smoke, but a fair amount of whisky and some peat. Tasty, warming and harmonious. Very nice.

Bottle, during a great family trip to Monschau. Color: Hazy golden, nice foamy white head. Aroma: Blend of floral, spicy, fruity, yeasty notes. Taste: Nice mix of fruity grape (Vermouth), hints of citrus fruit, floral, herbal notes, wormwood, spicy hints, yeasty notes, malty base and hoppy backbone. Smooth mouthfeel. Very well balanced. Moderste sweet and a light to moderate bitterness at the finish. Very nice one.

Small white head over quite carbonated pale yellow beer. Booze, rum, sweet malts - and typical Van Steenberge yeast. Sweet, alcohol, grain, rum, pale malts, yeastfeatures, bit (sweet) diary, sultanas. Alcoholthinning and -burn. Quite slick to viscous/oily despite good carbonation. Not the best of the Van Steenberge barrel aged tries. Txs to Stef!

Old rating from 02-10-16 - 330ml bottle picked up on my trip to Belgium last year. Pours at home in Jersey, it's dark brown colour with beige foamy head that lasts and leaves lacing. The aroma is rich of flavour which include caramel, dried fruit, raisins & figs. Taste is on the thick & slight sweet malty side with caramel, dried fruits, plums, cloves, raisins & hints of spice. Aftertaste has a slightly dry finish, alcoholic warmth and complex fruitiness with a low to medium bitterness. Full body, moderate carbonation. Considering the high alcohol content, it is very well hidden. I'm pleasantly surprised just how good it was & certainly would have it again.

Old rating from 06-07-16 - A 330ml bottle brought back from Belgium last summer. Pours a golden clear colour with a white head. Aromas of cereal, banana, apples & caramel. Tastes of yeast, caramel, bread, cereal, banana & apple. Carbonation is medium & body is medium to light. Aftertaste is a light balanced hopped in finish.
