The porcine philosophy above all reflects the character traits of piglets, both jovial and epicurean, as quick to chouille as to taste a mousse in the rules of the art. She also has the will not to take herself seriously even if it does not prevent anything from knowing how to assert herself.
Having the Pig Spirit is also knowing how to share with friends. So let's start by opening up a good beer!
Swine friendships,
The Big Three.

15 December 2018. Black Beer Fest, Ieper. Cheers to Anke, Erwin & Ama Deke! Hazy black with a lasting, small, frothy, beige head; little lacing. Strong aroma of earth, forest ground, wet leaves, damp earth, rain, coffee roast, walnut & chestnut. Taste is light to medium malty sweet, quite nutty, roasted nuts & warm chestnut, quickly turning medium roasted bitter, notes of pure coffee roast & fondant & earth battling with a (sourish) fruity accent of blackcurrant, faint vanilla & wood too; already warming up. Dry, earthy hoppy finish, lingering nuts, coffee roast, wood, warming & not too sharp bourbon alcohol. Full body, slick/creamy texture, soft carbonation. Well, what you expect is what you get...

15 December 2018. Black Beer Fest, Ieper. Cheers to Anke, Erwin & Ama Deke! Hazy dark brown to black; no lacing. Aroma of candied plum, raisin, peat, rubber, smoked ham & herring, bacon, salted peanut. Taste is medium malty sweet, quite chocolatey, peanut, smokey edge, pure peat & ham; some dark fruits like raisin & blackcurrant to soften it up; light roasted bitterness brings toast, roasted nuts, herbal & spicy touch, umami accent of cooked ham & bacon. Dryish, herbal & peppery hoppy finish, lingering peat, smoke, dark fruit, warming liqueur alcohol. Full body, oily texture, flat carbonation. Bit messy, weird, but not necessarily bad.

Tap at La Fine Mousse, Paris, 19th December 18. Pours a pretty deep pink. Aroma is berries, sharp. Taste is tart, unripe berry fruit, very sharp and quite sour, it's a refresher for sure, but I couldn't drink too much.
