PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Draft at Salud. Clear golden color white head. Nice aroma of very floral coffee. Taste has a earthy edge of coffee and herbs. Not many saison characteristics but tasty nonetheless.

This is a very good traditional style saison. Has a nice fine thick off white long lasting head and a cloudy slightly dirty yellow color. Aroma is yeast citrus white green and some old perhaps a little grass. Flavor is really good. The amount of carbonation perfectly balances the bitterness and the citric flavors of the beer along with the balance between sweet and bitter. Excellent body and finish. Very good drinking beer.

Sample at Brewvival. Hazy deep golden color, medium white head. Nice aroma of dusty fruity haystacks. Taste is white pepper, dark fruit. Tasty.

Draft. Hazy to cloudy pinkish red color, light pink head. Massive raspberry aroma. Taste is tart berries, lemon. Easy drinking, good summer drink.

Bottle. Clear brown color see pic please. Cinnamon and nutmeg aroma. Taste is sour spiced brown bread. It works.

Refrigerated 75 cl brown bottle poured into a snifter. Golden with white head. Aroma is tart, medium bottom, medium carbonation, and little lacing. Taste is tart malty citrus. Good beer.
