PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

On tap at the Ocelot anniversary, pours a muddy gold, slurry head, lemon yogurt nose, briny, a little brackish. Flavor is lemon, dandelion, yogurt, mignonette for oysters. Finishes oily and tart.

Refrigerated 75 cl green bottle poured into a glass. Cloudy golden with small white head. Aroma is peach, medium body, low carbonation, and little lacing. Taste is tart peach, white wine, and funk. Good beer.

Draft at Funk Collective at BFS. Cloudy yellow color fluffy white head. Nice aroma of cobwebs, dusty attics and barn corners. Taste is funky, dusty peppery hay. Delicious.

Bottle sample at The Funk Collective at BFS. Cloudy almost murky golden orange color, small white head. Stone fruit and plum aroma. Taste is lightly tart mixed fruit, light tannins. Nice.

Draft at the Funk Collective at BFS. Hazy golden yellow color, white head. Aroma of lightly vinous citrus, subtle tannins. Taste is softly sour stone fruit, light tannins, white wine. Very tasty and easy to drink.

Draft at Brawley’s. Crystal clear golden color, white ice cream cone head. Lightly fruity aroma. Taste is bittersweet peppery stone fruit. Very tasty.

Draft at Salud. Clear brown color beige head. Aroma of lightly fruity caramel. Taste is burnt caramel, subtle fruit and vanilla. Nice.
