Description
Trillium Brewing Company was founded by JC and Esther Tetreault, a young dumb couple in love, planning their wedding and dreaming about how they would spend their lives together. The desire to build a brewery was about more than just making beer, it was about creating a way of life and building a community with which to share experiences. A beer geek and botany nerd, JC chose the trillium flower to represent what we strive to bring to our beer and our lives: beauty, strength, simplicity, and balance. We operate a brewery and taproom in Canton, MA as well as a full service restaurant and brewery in the Fort Point neighborhood of Boston. We also operate seasonal pop-up beer gardens around the city of Boston under the Trillium Garden project.

Growler from the brewery. Pours faintly hazy yellow with a moderate, pure white froth. Refreshing aroma, lots of dry hay, dry lemon rind, mellow yeast and pale malt. Good flavor, plenty more dried lemon rind, straw, dried pale malts, faint crunchy grains. Light to medium bodied with fine carbonation. Clean and tasty to finish, some more dynamic citrus character, dry lemon, light melon and tangerine, more dry straw, crunchy pale malts. Solid, classically-styled saison.

64oz growler pours a very hazy, pineapple yellow with lots of lacing white head. Nose of tropical fruit, some pine, mild grass, lemon peel, soap. Flavor is well balanced, pine, orange, grapefruit juice, some tropical fruit, soap, mild sweetness. Clean finish. Solid. Hides the 7.2% in a dangerous fashion. Dare I say, this is another good example of a "North East IPA".

On tap at the brewery. Pours a hazy gold with some creamy white head. Nose is soft, grassy, some mild yeasty esters, light clove, some mild pepper, a little honey. Flavor has lots of honey sweetness, light hay, some flower petal, light clove and bubblegum, a little orange. Clean, silky finish. Soft and drink able. Sort of a hybrid.

On tap at the brewery. Pours a hazy gold with some sticky white head. Nose has a ton of buckwheat, bready, grainy, almost a little cooked quinoa. Flavor is the same, very odd, loads of buckwheat flour, almost a raw flour flavor, gristy, a little honey. Gristy, flour finish. Very strange.

Growler from the brewery. Pours clear, dark brown with a creamy tan head. Ashy roast aroma with hints of burnt marshmallows and subtle tangy fruits. Light to medium sweet flavor, further ash, very slight tangy dark fruits, dusty cocoa. Medium bodied with fine carbonation. Moderate sweetness to finish, some chalky cocoa, minerals, ash, light earth, burnt toast, dried dark berries. Very nice.

Growler from the brewery - Boston. Pours clear, yellow-gold with a foamy, white head. Lots of hops in the nose, some grapefruit and piss, a bit of Belgian yeast, dry dough. Medium to big sweet flavor, loads of pissy hops, melon, grapefruit, mellow yeast, dry white bread. Medium to full bodied with fine, caressing carbonation. Pretty crisp and clean on the finish - impressively so for the ABV - with more dank citrus, urine, lots of pineapple, melon, a bit of yeast. Delicious and highly drinkable for its strength.

Sampled at the brewery. Pours a hazy amber with some frothy, creamy white head. Nose is nice, soapy, orange, perfume, yeast, some spice. Flavor is spicy, mild booze, some grain, orange, some bread crust, some cheese rind. Slightly hot finish. A little messy.

32oz growler pours a slightly hazy gold with some creamy white head. Nose is nice and earthy, floral, chrysanthemum, a little spice, some mild alcohol, lemon, some grains of paradise. Flavor is nice, a little lemon-lime soda, some soap, some spice, floral, a little booze, some yeast, cheese rind, lightly vegetal. Really clean, easy drinking. At 8.5% this could really sneak up on you.

32oz growler pours a hazy orange with a ring of white head. Nose is mild but inviting, orange, pine, grass, malt, a little honey, slightly herbal. Flavor is very well balanced, malt, a little biscuit, orange, pine, mild soap, a flick of spice. Clean, dry, slightly zesty finish. Very nice. A good entry beer for them.

Pours red-tinged brown into a snifter. White head with little retention recedes to hug rim. Tropical fruit and resin aromas. Slick with earthy yeast, caramel and sweet tropical fruit front to back. Dry resin and grapefruit in the lasting finish.
