I hereby solemny propose a law to be instated by all beergeeks, -amateurs, -lovers, -tasters, - enthusiasts that forthwith the use of the infernal spice, known as coriander, is forbidden for at least the five first years of brewing, and later only to be tolerated by explicit consent of minimum five different accredited beerorganisations. Infringements ought to be sanctioned by denouncement to the international beerpress and public drainpour of the offending brew.

-1 point for the irritating wax. Muddy deep-brown beer with a few seconds of cream head. Vanilla, Bourbon, dried red fruit, rum, chocolate, dessert liqueur. Chocolate, vanilla, alcohol & fusels. Oakwood. Full bodied, alcoholheat, so dense there's no alcoholthinning; medium carbonation. I've had better from Pühaste in this segment.

Aged sample Despite its age, seriously gushing to small, if persistent, just off-white head over clear reddish-foxy beer. Solvent, woodstripper, varnish. Sweet cherrysyrup. Oxydation (of course), estery. Sweet wine, oxydation +/- in check. Again sweet red fruit and just a touch of solvent. Drier finish. Bit still, dull-ish; lightly sticky, maybe medium bodied. OK, it's aged. But a 9% ABV beer lagered on wine barrels ought to resist better. Txs to Stef!

Yellow head, dwindling over dark reddish, opaque beer. Chewing gum, sweet spices as cinnamon, liquorice; fruitgums, candi sugar. Dry liquorice, overdosing of some spice/herb, making it almost harsh-dry. Cacaopowder, woodstripper, cinnamon. Almost dry-out effect, dry backthroat, good carbonation, at least medium bodied. I'm never been a fan of beers where the taste stands perpendicular on the nose. As here. Txs to Stef!

Shortlived white head over veiled golden beer. Honey, pale malt(sugars), and a tangy Brettanomyces aroma. And somehow, I smell the long strands hanging from the chestnut trees. Sourish honey, if you please! Very original flavourprofile. Faraway vinous touches but the lemony Bretts reign. Unripe white grapes. Light body impression, just some (honey?) slickness; quite well-bodied. Excellent, delicate & complex beer.

Very dense & thick cream head over clear amber beer, finely carbonated. Chestnuts, bread, then clove, guiaiacol, and a perfumey-leafy aroma rounding the whole. Banana, wheat, clove, bit coloured malts. Creamy finish with again banana & clove. Soft, if adequate carbonation, quite wheatslick, medium bodied. In its Urweizen (rather than Dunkelweizen) style, quite convincing. Txs to Stef!

Huge, slightly yellowish head, stable, over lively carbonated veiled yellow beer, leaving textbook lacerings. Straw, dried herbs and exotic fruit, citruspeel a mile out. Quite a bit of ureum. Bitterish exotic fruit, dried pineapple minus the sugars. Dried herbs & leaves. Certain tongueside tartness. Very well-carbonated, hopoil-dry. Medium bodied. Very good IPA! Best of Sofia so far, easily.
