Description
We started brewing in February 2009 in the old loading bay of the former Tolly Cobbold Brewery in Ipswich on the Cliff Quay. The Tolly Brewery is located in the heart of the industrial dock area of Ipswich, and is a hugely historic site with brewing being carried out here since the 1700’s.

By 2012 it was becoming obvious that the old loading bay we were located in, which was not part of the Victorian brewery, was coming to the end of its natural life. So we took the reluctant decision to relocate. After much hard looking, we found a site in Debenham not far from our sister brewery in Earl Soham . This new site makes it much more logistical sense, so now we spend more time brewing and less time shuffling through the traffic between the 2 site.

Cask at CBC, Covent Garden on 17th February 2018. Clear gold with shallow white foam and spot lacing. Deep malt and hints of zesty citrus hops in aroma. Crisply hoppy in-mouth with a fruity kick. A creamy, buttery lactic transient. Bitter grassiness and fruits dominate the finish. A lot going on in a pleasant ale. Medium bodied with a light, slightly viscous mouthfeel.

Cask at the Cricketers, Ipswich. Pours amber coloured with a lasting average sized creamy off white head. Aroma of malt, citrus, light biscuit and hop with floral notes. Medium sweetness, moderate bitterness. Medium body, slight oily and chalky texture, soft carbonation. Ok, and looked the part, but something didn't seem quite right with the serving.

Handpull cask at the Grain and Hop Store, Cambridge. Golden and clear with a filmy white head and lots of lacing. Sticky malt aroma with marmalade and persimmon. Strong sweet taste with tangerine undertones. There are some earthy English bittering hops underneath, but it remains a sweet beer. Full body. I really like this.

Colchester Beer Festival. Cask. Almost clear amber beer, a few sparse pale cream colour bubbles. Smooth malts, sweetish. Light and sweetish floralness. Light tangy dried fruits. Smooth finish. Fairly drinkable but should be doing more for it’s abv.

Cask @ GBBF 2016. Pours an amber color with a small off-white head. Has a fruity malty caramel and dark fruit aroma. Fruity malty caramel flavor with weak hoppy hints. Has a fruity malty caramel and dark fruit finish.

By gravicask at Chelmsford & Mid Essex Winter Beer Festival. Almost mahogany coloured body. Bubbly off-white head. Caramel aroma, semi-sweet. Spiced mid-sweet malty flavours. More sweet than bitter to the ending. Decent (16.02.2017).

By gravicask at Chelmsford & Mid Essex Winter Beer Festival. Beige bubbly head to a deep copper coloured body. Mild caramel aroma. Mixed taste of dried fruits and caramel malts. Short-lived bittersweet end. Thin bodied. Easy going (16.02.2017).

Gravicask at Chelmsford & Mid Essex Winter Beer Festival. Dark brown body, covering fawn-coloured head. Modest liquorice aroma. Flavours of caramel malts and liquorice followed by a roasted end. Rather thin in the mouth. Accepted (16.02.2017).
