Description
Our beer is brewed across two sites. The first is our original brewery at the Old Flax Store, this is where we began our journey in 2014, and is home to our LDS tap room. We expanded into our second much larger brewery, Sydenham Road, in April 2017. Between both sites we can brew up to 18 beers at a time.
The Old Flax Store is a Grade II listed building located in Holbeck, the spiritual heart of the industrial revolution. In 2014 we turned this derelict mill into a brewery, tap room and events space. This building is home to our first brewery, which takes up the ground floor of the building. Our second brewing site is also located in Holbeck, half a mile away at Sydenham Road, where 8 x 100HL conical FVs enable our total capacity at this site to reach 24,000HL.

Cask at Craft Beer Co, Clerko. It pours hazy gold with a small white head. The nose is soft, toasty, cereal, grainy, spice and grass. The taste is crisp, toasty, straw, cereal, kiwi fruit, sherbet, lemon peel and grass with a dry finish. Medium body and fine carbonation. Crisp and simple. Perhaps a it grainy. Iโm not sold on this one.

Cask at CBC Clerko, 30/09/14. Clear golden with a moderate white covering. Nose is citric peel, light spice, straw, hoppy notes. Taste comprises bitter orange, citric peel, light caramel, straw, spice. Medium bodied, fine carbonation, semi drying close. Ok - hops donโt really shine in this one though.

Keg at Craft Clerko. It pours opaque near black with a medium tan head. The nose is rich roast, parma violets, orange peel, coffee and cocoa. The taste is bitter-sweet, citrus peel, parma violets/potpourri, roasted, malt, earthy, coffee, light soap and orange with a dry, roasty finish. Medium body and moderate carbonation. Good depth. Rather tasty stuff.

Cask at CBC Clerkenwell during the Northern Monk launch tap takeover. Pours cloudy yellow-gold with a foamy white head. The nose has citrus fruits, some melon, straw, pale malts. Light to medium sweet flavor with some juicy and fruity hops, lightly astringent hay and grain, bitter grass. Light bodied with fine carbonation. Some further pale, doughy bread on the finish, light yeast, wheat, lemon essence. So so. Definitely not an improvement on the base beer.

Keg at CBC Clerkenwell during the Northern Monk launch tap takeover. Pours clear brown with a wimpy, tan head. Ripe fruit in the aroma with some plum, berries, mild ham. Medium sweet flavor with up-front toffee, faint chocolate, candied ham, light smoke. Medium bodied with fine to average carbonation. Sugary finish with more toffee, mild candied ham, caramel, some further berries, other ripe fruits. Very minimal smoke character here, save for the hammy aspects. Tasty but basic.

Cask at CBC Clerkenwell during the Northern Monk launch tap takeover. Pours perfectly clear, pale yellow with a light, bubbly-frothy white head. The nose has simple white bread, citrus and straw. Light-medium sweet flavor with further basic pale malts, minimal bitterness of straw and hay, some cereal, some lemon rind. Light bodied with fine carbonation; perhaps lacking a touch of condition. Decent balance to finish with further cereal and dough, lightly bitter grass, straw, citrus rind. A very simplistic APA.

330ml bottle from, I think, Beermoth. Been sat on the beer shelf for quite a while now I felt itโs day had come. Pours black with a nice beige head and big whalloping dark malt aroma. Not too heavy with a nice bitter balance, some smooth liquorice and chocolate and a nice helping of dark malts. Lovely stuff.

Keg. Leeds IBF. Hazy gold. Thin, white head. Very sweet, lemony, biscuit malt. Taste is sweet maltiness. Palate is pretty sweet, and thick. Some bitterness comes through at the end, but this isnโt right, I think. Almost as if itโs not been conditioned long enough? Hate giving low scores. Will re-rate.
