Description
On Farnum Hill (and in most of the world), “ciders” are alcoholic beverages fermented from particular apples, just as "wines" are fermented from particular grapes. (Fresh apple juice is properly called “sweet cider” or – fresh apple juice.) Farnum Hill Ciders are dry (not sweet), aromatic, complex, great with plain or fancy food.

Cider apples, with their odd names and strange tannic flavors, make far better cider than fruit-bowl apples - just as wine grapes make way better wine than fruit-bowl grapes. “Bittersweet” apples (Dabinett, Ellis Bitter, Yarlington Mill, and more) help bring out a wild variety of aromas & flavors. So, many fruity, herbal, mineral, and earthy notes unfold within a pleasing tannic-acid balance.

Serve cool, not cold! Too much chilling hides the full fun of Farnum Hill aromas, flavors, and the fabulous food-friendly finish we’re so proud of.

Draft at Jimmy’s 43. Lovely fruit forward nose with some florals and astringent elements. Tastes of peach, apple skin, pretty tannic and astringent, light white wine, and finishes with ripe apples

Bottle at cider dinner at jimmys 43. Nice pour with light nose of apple skin and champagne. Fruit forward with a bit of residual sugar. Some bitterness and white wine flavors. Sweet finish but enough carbonation to make lovely summer sipper.

Bottle at the 2013 Chicago Cider Summit. Pours a clear yellow with no head and visible carbonation. Aroma has notes of musty dry apple with some earthiness. Flavor is thin with earthy apple up front and a bit of mustiness with a dry finish.

Bottle at Jimmy43s. Stemmed wine glass. The bacon grease nearly vented from the surrounding airs.

Moody lighting at the bar leads me to believe that this clear, golden cider might just be a bit fainter.
Smell is of tin-y apples, unripened fruit & green peppers, citrus rind, big acidity, grain.
Taste is initially mellow, building to a quietly lingering acidity. Void of any real tartness. Thick/husky, apple peels & drying, mildly bitter core. Browned apples. Salad greens. Missing that suckling dry finish.
Texture is more runny then thin. Quiet alcohol.

Very hard for me to enjoy crazy dry still ciders without them having some other note, like a little barrel, odd florals, or just a little more sugar to make the fruit pop.

Bottle from NBD. Lots of older Dooryards here if you look in the back of the shelves.

Fluted tulip. Classy clear, golden lager body. Not much fizz, but constant activity down below.
Cooked, steely apples. Something like oversteeped green tea. White table wine. Touch of oxidation. White pepper? Rice? Just an odd choice in words by me I guess. Just one of those days.
Wood is the first thing I taste. Touch of bitter rind. Has this rose water & ginger thing going. Iced down Schweppes sweetness. They say they use stainless, but this is quite leafy/woody.
Off-dry, with a slightly numbing quality. Barely carbonated. Thin & perhaps a bit starchy.

Probably the sweetest thing they’ve ever made, & barely at that. Not $13 easy, but easy. :)

Bottle tasted @ Jimmy43s. Went back for this a few more times then was polite just to try & understand it.

Wine glass. A slightly unsettled, mostly clear, pale gold body.
Leafy bittergreen scent. Apricot & lemon. Lumber. I’m expecting lots of acid.
Taste is bitter, unripened fruit. Sharp & more sharp. Lemon. Sucking on peach pits. Whiskey bitterness. Plastic? Tangy, soured/turned fruit juice finish. Confusing, my notes say I liked this.
Runny feel. Bit of dry mouth, again, very acidic. Carbonation is just under what might be considered moderate.

Good, but not great. Flagrant just works sometimes. Would of enjoyed some contrast though.

C&C 750 mL bottle from Beer Run. Pours a clear vibrant golden color with lots of carbonation that keeps a thin head afloat for a bit. Aroma of very sweet apples with a light tartness and some faint vanilla. The taste is dry apples, tart and slightly vinous with a slight Concord grape thing going on. Medium bodied, crisp.
