Description
On Farnum Hill (and in most of the world), “ciders” are alcoholic beverages fermented from particular apples, just as "wines" are fermented from particular grapes. (Fresh apple juice is properly called “sweet cider” or – fresh apple juice.) Farnum Hill Ciders are dry (not sweet), aromatic, complex, great with plain or fancy food.

Cider apples, with their odd names and strange tannic flavors, make far better cider than fruit-bowl apples - just as wine grapes make way better wine than fruit-bowl grapes. “Bittersweet” apples (Dabinett, Ellis Bitter, Yarlington Mill, and more) help bring out a wild variety of aromas & flavors. So, many fruity, herbal, mineral, and earthy notes unfold within a pleasing tannic-acid balance.

Serve cool, not cold! Too much chilling hides the full fun of Farnum Hill aromas, flavors, and the fabulous food-friendly finish we’re so proud of.

Very carbonated rusty rosé.
Rustic, funky nose with poignant, tannin-rich, berry-like acidity. Earthy and dry and not too acidic or overly Bretty.
Soft and lightly juicy with a vinous acidity and overall character. Incredible complexity with appropriate body and low Brett. Stunning.

Draught at the cidery, 10/3/25.
Lightly hazy, pale golden. Some carbonation from refermentation.
Big, but aged Brett in the nose has a lovely stone fruit, pear and hint of band aid character with dry, though slightly juicy apple character.
Dry and fruity with good acid and leathery chew to the tannin. Brett is apparent but not dominating. Easygoing acidity and soft funk with good minerality. Light, natural carbonation.

12oz can from the liquor store. Brilliant light golden color with a smattering of carbonation and a short lived bubbly white head. Faint apple and lightly tart flavor. A little drier than I like but refreshing just the same.

Bottle shared on MV. Pours clear, rich honey-gold. Lightly sweet, quite dry, some old and dried apples, a touch of acidity, bit of musty funk, light booze. Medium bodied, soft. Dry finish, mild warmth, more dried apples, cellar. Good stuff.

On tap @ Owl Farm. No batch notes on the keg collar. Wine glass. Clear gold. Mostly still. Most likely intentional. Fruity, underripe apple & green mango nose. Peachy, lingering acid, clay, minerally. Dry, good bubbles, thin, lacks bite. Okay, but is missing something. Doesn't come off as a Farnum Hill production.

On tap & in cans at Wassail on the LES. Pale, clear, flat, glassy pour. White wine, with a slightly sour apricot scent. Soft, gently tart, dry, fruity build. Not Farnum Hill staple dry, but coming right afterwards. Crushed green grape essence, falling puckering dry on the finish. More acid & less bitter then house stuff. All in all, it tastes like a lighter, more approachable Farnum Hill semi. Pretty good.
