Pretty clear, but slightly hazy, beautiful golden coloured body with a tint of bright orange, copper and bronze, somehow all shining through the nice golden glow, all with a thinnish and fast-dying off-white head that gets at most two centimetres tall. Aroma of super bretty, spontanteously fermented, oaky and dry saison notes with a lot of light malts, some hay and grass scents, but a complex, light fruity quality and a lot of funk components make this very nice and super complex in the nose - almost mouth-watering. Light to Medium-bodied; Assertive funky and peach notes dominate up front with a lot of foeder and oaky, cedary notes right away with an almost extreme dryness and some pine like components, that gives way a bit further down the line to some softer fruits and sweetness, but the dry notes dominate in a good way. Aftertaste is funky and all about the yeast here, with some bretty and dry components, this spontaneous fermentation and floral finish makes this very nice and robust with a light kick of apricots and stone fruits towards the end. Overall, a very nice and super complex, funky beer with more dryness and yeast flavours than anything else, but some light fruits, a touch of sweetness and some very noticeable cedar and foeder flavours make this robust throughout. Great to sample, especially after this time in the cellar and a quality, funky, complex beer that hits the notes nicely and is probably ripe for drinking right now, but what do I know - maybe some more time in the bottle will make this even better! I sampled this 75 cL bottle purchased from Knightly Spirits in Orlando (Orange Blossom Trail), Florida on 05-May-2018 for US$13,29, as Batch #481/579/581, bottled on 05-November-2015 and sampled at my house here in Washington on 14-October-2022.

On tap at Uno Chicago Grill in Hamilton, New Jersey. Clear yellow gold color. Small white cap. Slight yeast malt aroma. Flavor is tangy malt with hints of yeast and oak. Lemon peel, white grape and fresh hay. Some booziness in middle. Citrus and pine on backend. Clean, crisp finish.

Bottle shared in London - picked up in the US. Pours clear gold with a frothy, white head. Bit oxidised, old wood, aged berries, quite dry, lots of bitter grass. Medium bodied with fine carbonation. Bone dry finish, more pale wood, grass, oxidation, light tang, lemon peel. So so overall.

Very hazy deep amber and even bronze coloured body with a thinnish and relatively fast-dying off-white head that leaves a thin lace on the sides, all above the murky, brown body, about 80 per cent opaque. Aroma of very tart and soured, funky fruit notes dominate with a lot of oak foeder notes along with a bit of spontaneously fermented yeasts as well, very complex in the nose and especially tart - nice! Medium-bodied; Rich cranberry and funky spiced fruit notes (pears?) Show through just about everything here and make this tart and soured from the start with a good backbone from the mild but noticeable malts and showing a good, crisp cranberry and blackberry pungency, but the oak, cedar and dry woodsie foeders are perhaps stronger and definitely more complex. Aftertaste shows a lot of complexity from the main two sources of course, cranberries and fruit and the oak foeder notes, with a lot of sour qualities and a dash of malts and very light sugars that provide some variance at the end in a good way. Overall, a very nice and super elegant beer with a lot of fruited notes, more oak, dry foeder notes, but an easy-drinking yet very complex beer that hits all the right notes - great to sample, especially far removed from my home of Michigan, from where I bought this to where i'm having it! I sampled this sixteen ounce pint-sized can purchased from Knightly Spirits in Orlando (Orange Blossom Trail), Florida on 30-December-2020 for US$3,79, perhaps packaged on 06-June-2020 (i can't read the slanted print on the bottom of the can), sampled at my house here in Washington on 13-September-2022.

Draught and bottles upon release at Deep Ellum. But like many beers back then, I wasn't rating, so here's a rating on draught at Detroit airport, 9/12/22. Moderately hazy, rusty-bronze. Thin, off-white head. Excellent sour/malt balance. Not sure I get any adjunct but that's fine with me. Pretty straightforward house culture character: moderate-to-heavy lactic, low acetic, moderate Brett. Definitely some spice and/or vegetable in the flavor, though I'd be hard-pressed to ID them blind. Otherwise, strong lactic acid, moderate malt (cookie, honey, biscuit), high attenuation. Nice mild tartness with restrained spiciness on the end. Excellent malt and tannin texture. Really glad to see JP's beers are no longer acetic-forward. That was pretty awful for a stretch there.

750mL bottled 6/18/2017, drunk 9/10/22. Pretty incredibly they still have over 5 year old bottles of these and other beers for sale at the brewery. Mostly clear, deep bronze with a large, off-white head showing moderately-strong retention. I smell some vanilla-like oxidation right away, but otherwise it's full of boisterous fruitiness, including light-to-moderate acetic and moderate lactic acidity. Some enjoyable Brett slowly emerges, as well. Smells like an old Flemish wild ale. No adjuncts apparent at this age. No alcohol noted. Oh wow, that's wacky as shit. Spicy, phenolic, sweet and malty with a heavy smoke and pepper undercurrent. Reminds me very much of mezcal. Preserved lemon adds an interesting bitter element, as well, though I think, ultimately, it's a bit too much astringent bitterness, impeding drinkability. Soft, very malty body, smokey through to the end, with good attenuation and no alcohol or heavy/excessive sourness. Not something I'd drink frequently, but interesting and pretty successful, I think.

Detroit taproom draught, 9/9/22. Lightly hazy, pale brass-bronze. Small, white head of low retention. Soft and mild with no overt adjuncts discernible. I THINK I can sense some basil and tomato, but almost certainly that's the power of suggestion. What it does have is mild-to-moderate, even, lactic acid and moderate, well-developed brett with pear, lemon, black pepper and soft, supportive malts and oak tannin. Pear, black pepper, strong Brett hickory-like character and a soft, supportive malt with good attenuation. No big sourness, just tart and fruity with mild citrus-like notes and really not much of the adjunct; certainly nothing weird or disruptive. No alcohol or flaw. Just feels like a well-aged, oaked sour with good balance.

Detroit Taproom draught, 9/9/22. Mildly hazy, bright lemon-to-brass. Small, off-white head, low retention. Nicely tart nose with mostly fruit acids, but yet not overdone with the fruit, certainly not the sugar. Grains are soft, supportive, seemingly well-attenuated. Hint of brett and mild Sacch. esters with no alcohol or flaw. Great fruitiness with good acidity and tartness, light saison qualities and tons of juicy tropical fruits. Just enough sweetness but with good attenuation, drying out on the zesty, tart finish. Soft and malty with no alcohol or flaw.
