Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.
Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Pour is a clear brown with a small white head. Aroma is an intense cinnamon and clove. This smells just like fresh baked apple pie. Flavor is some more cinnamon and spice but I do detect a nice squash flavor in there as well. This was a very tasty beer but also one of those beers that you love but I don’t know If i could drink too much of this in one sitting. It is a cinnamon and spice bomb.

Pour is a cloudy orange with a small white head. Aroma is a nice wheat with some fruit and spice. Flavor is a nice surag sweetness followed by some spice and sour apple. Alcohol is not a problem in this tasty beer.

Pour is a cloudy gold with a small white head. Aroma is faint malt with some Belgian yeast. Flavor is floral and super tart. Some yeast and spice do show up. Finish is again very tart and dry. This was ok and I would get only at the brewery itself as the bottle price is way to high.

750. Pours a medium gold with a little bit of a reddish tint to it... just enough to make me question whether I’m imagining it or not. Bit fluffy head leaves lots of foam on the sides of the glass as it recedes and I sip. Aromas are light... a bit of honey and a bit of strawberry and something plant-like is about all I’m picking up for sure. Flavor highlights a plastic-like taste that I’m not sure about. I think this is something I have seen before in beers with strawberry. There is a little bit of tartness that I guess I would attribute to the rhubarb, but it is faint and only comes out in the aftertaste. It doesn’t really have a rhubarb flavor (sadness... great sadness...) and there is a pretty decent sweet maltiness (honey-like) in the mid-palate. I have to say this was a bit of a disappointment. I have had a fantastic rhubarb saison from HopCat and made my own decent stab at it with homebrew. This beer doesn’t stand up to either of those.

Capped 750 from Wine & Cheese in Clayton, MO. Pours hazy dark orange gold with a creamy white head. Aroma is hop with an earthy undertone. Quite promising. Med plus body. Flavor is a little citrus sour, followed by some really earthy hops and yeast/spice notes. Though I guess the earthy is also from the yeast based on the description. If the hops aren’t earthy tho, I’m not sure what they are. Pretty good bitter! Each quaff is a pleasure to both the nose and the mouth. This is pretty good ale.

Capped 750 from Wine & Cheese in Clayton, MO. Purs hazy gold with a transient white head. Aroma is sort of generic light fruit. Med (almost) body. Flavor is strawberry with something that might be rhubarb. More saison than fruit. Lightly tart.

Capped 750 from Wine & Cheese in Clayton, MO. Pours hazy orange tinged gold with a nice near white creamy/frothy head. Aroma is Belgian yeast/spice with some floral accompaniment. Near med body. Flavor is mildly spicy, a little bready, and heavily floral. Based only on my impression I’d put it in as woodruff, but clearly it is chamomile. And there’s a lot of it. Arguably there’s a little earthiness in it. It’s quite different, and it’s very good.

Pour is a clear gold with a small white head. Aroma is some pale malts and not much else. Flavor has a decent cereal malt with almost a little roasted aspect. Finish is is clean and bitter. Not really my fav style but this is very drinkable especially with the low abv.

Pour is a clear bronze with a small white head. Aroma is a big Belgian yeast nose with some lingering sugar. Flavor is a dry pale malt with a almost slight apple. Finish is clean with a little spice toward the end. A well made beer that smells fantastic.
