750mL bottle drunk 8/6/25.
Clear brass. White head rapidly fizzles out.
Juicy grape with a bit of mineral and lots of stone fruit joined by plentiful oak and some light saison qualities. Juicy, vegetal, peppery and soft. Bit of funk on the finish, too.
Oh wow, that's shockingly softer in acidity than the Orange Wine Process version. Woody oak but not buttery or acidic. Juicy citrus and round, well-aged grape. And funk! Some lovely sulfur in there! Lower carbonation with great malt depth and moderate oak. Actually could use a bit more dryness/biscuit/cracker/pepper on the finish.

Like drinking a young Gruner or Riesling. This needs many more years. Going to stop opening these for now. I do think they are excellent beers, just meant to age for a lot longer than 2 years. Sadly most people don't understand and just think they are too sweet, rich, and forceful. Score is where I think this could be in 5 years or so. Though it could be a lot higher than that, too.

375mL bottle drunk 8/4/25.
Clear, rosey-brass-golden with a small, off-white head.
Tart and fruity with good lambic and saison character alongside moderate oak. Light white wine and butter with good acidity, quite healthy per SP, but maybe not so much as usual for a lot of their sour stuff. Certainly aromatic, bright and focused.
Bright and wine-forward barrel with excellent saison character alongside a fruity, earthy, lightly oaky lambic. Good malt/wheat depth/texture and not too sour! It's so nice when there's no acetic, so you can really enjoy the oak/wine/butter/tannin without the acidity building up too much. Here's to more to come like this from SP!

Pours black, small to no head. Scent is cinnamon intense, chocolate back. Taste is full, sweet, intense, chocolate, cinnamon. Bit too much cinnamon for me honestly. Fullbodied, thick and low carbo.

Pours very dark , muddy brown. No head. Scent is bourbon heavy, fairly sharp boozyness. Rich , dried fruits, toffee. Taste is full, sweet, toffee. Not the most thick ( yet certainly thick, obviously). Boozy. A lot of vanilla. Very decent, but not mindblowing

Dark. Small, tan head, instantly fizzles.
Yeah, that's the stuff! Rich, bourbony, huge vanilla and coconut-samoa cookie. Sweet, not too much so. Not boozey. Vanilla, fudge, chocolate and more malt lingering without excessive sugar.
Soft, sweet, lightly syrupy, rich and luscious with vanilla, chocolate, coconut and such lingering. Rich, thick, but not syrupy or cloying. Great acidity on the finish with coconut lingering long.

Bottle for Billy's 40th Bday Celebrations. It pours oily jet black with the a small dark tan head. The aroma is sticky, oily, dark roasted malt, charred, umami, burnt toast, bourbon soaked oak, umami, marmite, fudge brownies, vanilla, toasted marshmallow, chocolate sauce and mars bar. The taste is smooth, bitter - sweet, dark roasted malt, fudgey, vanilla, marshmallow, rocky road, warming booze, chocolate sauce, bourbon soaked oak, toffee, vanilla fudge, warming booze, sticky and filthy with a slick finish. Fulsome body, fine carbonation and slick mouth feel..

Bottle shared at the craft beer junction bermondsey tasting. A thick dark brown black coloured pour with a halo of tan head. Aroma is rich earthy, alcohol, marker pen. Honey. Flavour is composed brown sugars, coconut, rich, alcohol burn, caramel. Little harsh.

Incredible depth. Luscious dark malts, dark fruits, toffee, vanilla, fudge, toasted wood, raisins, burnt marshmallows, plum, fig. Chocolate cake. Warming, somewhat sticky. Really dangerous stuff. Impressive.
