Refrigerated green 375 mL 2011 bottle obtained through trade with JStax corked and caged poured into a white wine glass. Pours clear pale golden with fluffy carbonation which dies down. Aroma is simple dry apple, extreme carbonation (the cork went airborne and landed 15 feet away. Taste is dry apple, oak, and a hint of skunk (quite using green bottles). If you like dry ciders this is good.

Bottled. A hazy golden cider with a thin beige head. The aroma has notes of apples, wood, and vinegar. The flavor is sweet with notes of apples and wood, leading to a dry and tart finish.

Champagne bottle, 2011. Rich, ripe apple nose, some caramel, baked apple, peel, some light grass. Deep amber, clear, almost still. Dry and rather bitter flavor, dusty, grassy, not much apple taste at all. Quite bitter and alcoholic. Interesting. Not immediately likeable, but I think it is growing on me. Very clean and refreshing.

0.375l corked bottle #4012. An 11% cider? Now I've seen that to. Anyhow, this is a crystal clear one. Golden in color with a quickly fading fizzing little near transparent white cider top. It smells of earthy apples, cellar, some woody tones, roses, some caramel sweetness and traces of dry rocks. Not extreme, but quite elegant and nice. It's lively fizzing on the carbonation level this, and really dry. No sweetness what so ever in this and yeah, the 11% has turned this in to something a bit more than your average cider. Indeed, but the alcohol is yet somewhat camouflaged in a strange way. Old dusty apples and cellar. It's really mouthdrying and astringent this. Apple zest and it's almost like chewing on fruity apple cores. Grows on you. Enjoyable, but a small bottle should be enough. At least enough for me. 23.01.2013

0.375l (bottle#4012 from 2011) absolutely stunning looking and strangely corked-patented long bottle. Just love the design on this bottle. It pours a really cloudy dark brown-orange almost muddy looking body and there are some transparent bubbles that stays on the side of the glass. The aroma fills the room. It's surprisingly berry-sweet this. Lot's of fresh red summer berries. Wild-strawberries at an distance but close up it's more apply-concentrated and almost a bit cellared. Really beefy like a meaty fat and salty stock. Quite interesting. Oh, my this was a lot of flavor! So so concentrated and sweet! Loads of sweet concentrated green and yellow apples with a gazed caramelized sweetness like I've never tasted before. Apple consentrat with a taste of autumn and juicy sweet blood oranges. I get pictures of myself climbing in the apple trees as a child as I'm drinking this. A really interesting genre, my first actually, and a cider totally packed with flavor flavor flavor! I'm popping the cork back on and will enjoy this over a longer period. 07.01.2013

Sampled at the 2013 Chicago Cider Summit. Pours a clear pale gold with a bubbly white head that starts at the edges and dissipates completely, visible carbonation. Aroma has musty apple with a combination of sweet and tart notes. Flavor is quite musty with more tart apples and a bit of funkiness in the finish.

Bottle. Oaky, apple cider, and vanilla aroma. Hazy amber and no head, as per usual for cider. Syrupy sweet caramel apple and oak flavor. Full sticky body, no carbonation.
