Thanks to Jeffn7 (Secret Santa) for this. Brilliantly clear, rich golden colored still cider. Lightly spicy, fresh apple aroma. Simple yet very well done, just lots of fresh apple flavor. Light yet coating, no feel for any alcohol here. Very easy drinking, refreshing sipper.

Bottle. Sour apple aroma. Cloudy golden yellow color. Slight sweet-sour apple flavor - moderate acidity and carbonation. Very nice, well blended and dry cider.

My first French cider and I loved it. Cloudy appearance like a wit with sediment. Some barnyard to the aroma as well as apples. Sweet sugar and sour funky weirdness.

Cloudy straw/grain color, with nearly zero carbonation, but some large, clinging bubbles none-the-less - very sweet aroma or honey and overripe apples, some earthy, barnyardy must - starts dry and crisp, but just a bit of tartness - very sweet through the middle, with the honey and overripe apples from the aroma coming through - oak and vanilla come in near the finish - doesn’t finish as dry as some ciders, but a tannic (as others have noted), chardonay-like quality does come in to balance the sweetness - a very nice cider.

2003 750mL bottle shared with Walt and Eyedrinkale on 9/30/2005. Actually I ended up drinking most of the bottle because no one else liked it enough to finish it at 4 in the morning. Pours a glassy, white peach and chardonnay colored golden-yellow, light bubbles forming a pinch of white head that vanishes immediately. Does not leave thick legs on the glass. Aroma of sweet, almost nutty, or barny-like notes, a moderate amount of acidity is foretold from the aroma. Lightly tannic, oily and dry, with a definite blue cheese-like note. Hints of dry, funky yeast in there too. Flavor is initially lightly sweet, moderately acidic/tannic and full of strong yeast. Tastes similar to chardonnay in that the oak character mixed with the yeast imparts a woody-peachy character. Finish dries out significantly, completely leaving any of this meaty/peachy yeast and wood character. Instead there is a prominent lacto flavor, a lovely tartness and a lingering apple-champagne-like quality, very rustic and wonderfully flavorful as it lingers on the palate. Couldnt stop drinking this stuff, even the next morning, after sitting out in the glass it was splendid. Couldnt help but make the connection with lambic. It’s like an apple lambic in some ways, not nearly as dry and tart, but the lactic character and rustic farmhouse nature, with the natural carbonation and tight mouthfeel all provide similarities. Wonderful stuff and at $10 for a bottle at my local store, I will certainly be picking some up.

Sampler from bottle at Binny’s, Orland Park. Hey, French farmhouse cider. First thing I notice is that it’s really cheesy, like some Belgian beers I have known. Then an applejack character comes around to remind you what this stuff is. Pours light and peer-colored, with just a little cloudiness. Still getting my sea legs on ciders, but this is pretty good stuff.

Cloudy tan colour. Minimal visible carbonation. Fruity, tannic, alcoholic aroma. Flavour is sweet, with an appley, leathery character. Finishes soft and smooth, which is a bit of a letdown.

2004 vintage. Hazy golden body, nary a head. Nice sweet apple aroma, not too distinguishable from apple juice but with an earthy funk to it. Nice, full sweet apple flavor with a vinous character, rounded out by woody flavors imparted by cask aging. Woody finish that dries up the remnant apple sugars. It’s strange how apple beers can approach this flavor so closely. Very tasty and addictive...but at $10.99/bottle, this won’t be a common sip.

[vintage 2003] Pours a cloudy golden, like a belgian tripel - musty, damp aroma, with lots of apples and pears - champaigne-like initial flavor and carbonation - tart and lambic-like, with full mouthfeel - barnyardy belgian-ness, with apples and grapeskins - a delicate, quality cider.

(Vintage 2000, sampled in August 2004) . Uncorks with a smallish pop. Pours with full champagneesque effervescence. Darkish bruised apple yellow. Rich aroma, apples of course, a bit of sulfur, pear may be present. Some notes of horseblanket - on the whole surprisingly lambic-y. Nicely tart with a smooth well rounded and true apple character. Finish is soft, sweet. The brut character is obvious and slightly detracts from drinkability - I prefer a drier finish. On the whole, the lambic-y nature of this was a very pleasant surprise, highly enjoyable.
