750ml bottle pours a lightly hazy, bright yellow with one ring of white head. Aroma is fruity, a little cheesy, a little horsey. Almost has a guezey kind of nose. Flavor is sweet, fruity, lots of apples and apple juice. Finish is sweet and a little wet. I’d like this a touch drier.

Very likely, the Fermier is the same as the Brut de Normandie, and alcohol varies every year.

Highly carbonated, the cork pops with a loud sound; it pours a clear golden color, with big head but reducing quickly; big bubbles in the glass.
Interesting aroma: besides some apples, there is a good trace of roasted hazelnuts.
The carbonation being all gone in the foam, the mouthfeel is quite soft, and sweet too (I expected a dry cider instead, both for the ABV, the age and the high carbonation); the flavor is very woody, with soft tannins and astringency, and apple skins; light hazelnuts. The final is a bit on the dry side.
A very pleasant and reasonably complex cider, and it’s impressive how it keeps a good shape after 7 years.

It pours a dark amber color, hazy, flat. Aroma of apples, nuts, caramel. Strong body, even if less thick than other Ice Ciders, very sweet, with a distinctive late wood astringency and late acidity; flavor of overripe apples, caramel and some honey.
The caramel presence makes me think of a concentration obtained by boiling the cider, more than by freezing the apples; decent but not as fresh and fruity as the Canadian samples; nor it is as complex, but at least the astringency is original..

2007 Vintage, waxed. Ripe, slightly overripe apple aroma, a little buttery. Opaque burnt orange. Medium bodied apple flavor with mounds of brown sugar that grow in intensity to a wonderfully complimentary climax. Musty undercurrents add to the intrigue. Nice lightly carbonated mouthfeel. Not excessively sweet or tart. Relatively low acidity for the style, which I find especially refreshing.This is so much better than my homemade ice cider. Very good and worth the premium price.

Recolte 2007, at a tasting, many thanks Zvikar, almost no head and carbonation, a touch hazy lemon yellow colour, aroma of vinegar, ripe apples and leather, flavours of ripe apples on the border of being overipe and some woodiness, long appley sour aftertaste which is quite pleasant. A solid well made cider, though not very complex.

Golden color, the finest perlage; small crown of foam on the upper sides of the glass. Delicate apple juice aroma, hint of hazelnuts. The flavor is half-sweet, moderate apple flavor; there is an exogenous note, but I can’t tell if it’s the Calvados; it misses some depth and the woody astringency that I like in French ciders. Elegant but not impressive.

Hazy golden color; nice thin perlage. Strong aroma, of Golden apple peel, oxydized. Good body structure, with some sweetness in the front, juice of mature yellow apples, a hint of honey. The final gets some complexity by being lightly astringent; the apple flavor lasts for long. Very good.

375 served with some crazy good cod fritters. Served into a Saison Dupont glass. Clear, saturated golden hue. White ring of fizz. A couple nucleation points in the glass that easily amuse me. Smell is of baked apples, hay, sulfur, & a light green apple tartness. Bright & somewhat floral. A less muddled bottle then the one I picked up from New Beer Distributor’s sweat shop factory. Taste is bittersweet upfront, slightly briny, with a rounded, zesty, & juicy center. Some drying wood tannins. Incredibly refreshing. Minor solvent finish. Light chalkiness, moderate acidity, & overactive to a slightly harsher point then champagne. A little heft to the body keeping the finish from being anything more then slightly dry. Love it. :)

Bottle. Hazy golden-orange color with really strong carbonation. Fresh aroma of green apples and oak. Sweetish and slightly acidic flavor of apples, wood and sugary notes. Too sweet but still decent.
