A lightly hazed blonde cider with fine bubbling, no head. In aroma, super complex mix of apple pulp, Brett, foliage, and lactic notes. In mouth, superb cider, where apple pulp meets fresh cheese, burning leaves, light peaty character, very nice. On tap at Farmhouse Vermont.

Refrigerated 75 cl green bottle corked, capped, and foiled poured into a white wine glass. Pours very pale yellow with small white head which dissapates very quickly, medium carbonation, aroma is beautiful tart apple, and no lacing. Taste is nice apple. Something in the finish is not that great, not worth the price.

Small bottle from Bushwacker. Pours a clear dark copper color with a small white head. A rich sweet fruity nose with sweet apples, wood and huge apple pie. The flavor is almost entirely dry, tart, green apples, sawdust, quite fizzy, earthy dusty tart finish. Good.

2011 vintage: A lightly hazed golden cider with a quickly collapsing white head. In aroma, a beautiful wild yeast over apple pulp, brett notes, musty cave character. In mouth, a smooth sweet cider sugar with cork and brett, some astringence but very nice.

On tap at Meridian Pint’s DC Beer Week Cider Event. Pours a clear, straw, honey gold with one ring of white head. Nose has a ton of funk, lots of cheese, like brie baked with honey, very horsey too, some grass. Flavor follows on, very wild, sweet, honey, apples, grass, super cheesy, yogurt, a little almond. Sweet and cheesy finish. This is like a cider, mead and gueze had a threesome.
