Description
Established in 2012 by renting of the former Pitfield's plant at Moreton, Ongar, which was taken over in 2015. Though based at Pitfield's brewery, it operates independently. In mid-2018, the brewery closed it's plant and started cuckoo brewing at Red Fox Brewery, Coggeshall.
Note - Beers have not been brewed for some years as the owner concentrates on his Colchester pub, the Queen Street Brewhouse, but the brewery remains active on companies house.

Pigs Ear Day 1. Cask. Hazy deep amber beer, bubbly pale cream colour head. Palate is light, semi dry and has modest fine carbonation. Thin caramel - toffee malts. Cinnamon and cloves. Ripe fruits includes some apple and orange. Semi dry finish. Christmas spiced nonsense but fine.

Cask at Pigs Ear, 2015. Reddish-brown pour with a white head. Toffee, raisin and chocolate aroma which segues nicely into the flavour.

Cask at Pig’s Ear 2015. It pours murky red-brown with a decent beige head. The nose is soft, sweet, slightly tart, sour cherry, Christmas fruit cake, toffee, cinnamon and some tang. The taste is toasty, earthy, festive spice, wood, leather, some charred notes, umami, ashy and dirt with a pretty dry and spicy finish. Medium body and low carbonation. Too much dry cinnamon notes. Interesting, but far from refined.

Cask gravity at Pig’s Ear 2015. It pours clear deep brown with a small beige head. The nose is toasted brow bread, quite earthy, burnt toffee and some spice. The taste is toasty, grainy, brown bread, chewy malt, damp leaves, dried wood, light ash, dirt, salt & pepper and earth. Light - medium body and soft carbonation. Has a very dry lingering finish. OK mild, but it didn’t quite engage me.

Gravity at Pigs Ear ’15, 01/12/15. Reddish amber with a decent beige covering. Nose is spice, gingerbread biscuit, toffee, nutmeg, winter cheer. Taste comprises malt, gingerbread, spice rack, caramel, clove, toasted brown sugars. Medium bodied, moderate carbonation, semi drying close. Decent winter spiced affair ... good balance.

Cask at Pigs Ear 2015, day 1 - London. Pours unclear read-gold with a bubbly white head. Odd spices in the nose, some herbal tomato sauce. Light sweet flavor with harsh bitterness, herbal hops. Medium bodied with fine carbonation. Dry and bitter on the finish, with more herbs and spices, light ketchup, aggressive grass. Not very drinkable.

Colchester Beer Festival at the Colchester Arts Centre. Cask. Hazy gold beer, residual pale cream colour head. Palate is light and semi dry with modest fine carbonation. Light pale malts, a little dry. Mild floralness turning slightly soapy. Whisper of lemony citrus. Light finish. Underwhelming but okay.

Cask at Pigs Ear 2014 - London. Pours cloudy gold with a creamy white head. The nose holds grass, melon and leaves. Medium sweet flavor with sugary pale bread, alcohol, meringue, mandarin orange. Medium bodied with fine carbonation; OK condition. Sticky pale malt sugars in the finish, some semi-ripe citrus, marmalade, bread and melon. OK.

Bottle shared at the chriso Snow Tasting - London. Pours cloudy gold with a creamy white head. Tangy aroma. Medium sweet flavor with harsh malty sugars, white bread. Full bodied with fine to average carbonation. Hot and sugary on the finish with further white bread, ripe and tangy citrus. Not awesome.
