Description
The Bruery® is a boutique craft brewery based in Orange County, CA, specializing in experimental and barrel-aged beers since 2008. Founded as a small, friend & family run business, The Bruery takes it’s unique moniker from founder Patrick Rue’s family surname.
Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Bottle from Utobeer, Borough Market. Uber rich nose of dark chocolate, bourbon, cocoa. Smooth boozy taste of dark chocolate, plum jam, bourbon, toffee, caramel. Unsurprisingly sweet warming finish.

Bottle from Utobeer, Borough Market. Rich nose of plum jam, prunes, bourbon, liquorice toffee, smoke. Uber warming flavours of prunes, bourbon, peat, plum jam, caramel, toffee,. Exceedingly boozy sweet warming finish. Utterly spot on.

12.7 oz bottle acquired out of the collection direct from The Bruery. This one I have been looking forward to, lots of interesting and curious adjuncts. My New Belgium globe glass awaits. The pour is a dark caramel finished by a healthy head of parchment foam. I get a nose of ripe fruit and chocolate, again interesting. The taste covers a lot of bases, let me go through them. Chocolate, a hint of coffee, berries, plums, oak, malt and a small sourish background. Decent enough, I enjoy a good quad, but a distance from my best.

Keg at Brewdog Shepherds Bush, London. An almost black coloured pour with a thin beige head on top. Rich, sweet, boozy, whiskey, malty, chocolate, caramel, rye aroma and taste. A big beer which doesn't taste like 20.2% at all. Shame this particular Brewdog bar is closing, never seemed busy since Covid. Good memories though.

Keg at BD Castlegate. It pours oily jet black with minimal head. The aroma is oily, super dark roast, umami, burnt toast, touch of marmite, lovely praline vibes, toffee, bourbon soaked oak, dark chocolate, mars bar, sticky and warming booze. The taste is slick, oily, full in the mouth, slick, super dark roasted malt, charred oak, burnt toast, fudgey, toffee, bourbon soaked oak, fruit cake, vanilla, touch umami, cacao nibs, coffee, praline, plenty of warming booze and bourbon fudge. Full body, slick and fine carbonation. Rich and indulgent. Fun stuff.
